Dean's Premo Chili

- 2 lbs ground beef
- 2 cans dark red kidney beans (Bush's)
- 2 cans stewed tomatoes diced
- 1 can stewed tomatoes whole
- 2 medium onions diced
- 2 green bell peppers OR 2 cans (4 oz) green chilies
- 2 cans tomato sauce
- 2 small 8 oz. packs of Mushrooms
- Chili powder and salt to taste
- Add saltines and mild cheddar...
Blackened Salmon

Truly awesome flavor with a Cajun flare!
- 2 tablespoons ground paprika
- 1 tablespoon ground cayenne pepper
- 1 tablespoon onion powder
- 2 teaspoons salt
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 4 salmon fillets, skin and bones removed
- 1/2 cup unsalted butter, melted
Carrabba's Mussels "Cozze in Bianco"

Steamed mussels in white wine, basil and lemon butter
- LEMON BUTTER SAUCE:
- 4 cups mussels
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons yellow onion, chopped
- 2 tablespoons garlic, chopped
- 2 tablespoons pernod (licorice- flavored liqueur from France)
- 1 1/2 tablespoons fresh basil, chopped
- Juice of 1/2 lemon
- 3/4 cup lemon butter sauce (recipe follows)
- 2 tablespoons clarified butter (you'll need about 1/2 stick butter; directions follow)
- 2 tablespoons yellow onion, finely chopped
- 2 tablespoons garlic, finely chopped
- 6 tablespoons, fresh lemon juice
- 2 tablespoons, dry white wine
- Kosher salt
- White pepper
- 2 tablespoons cold butter
Cracker Barrel Broccoli Cheddar Chicken

Preheat your oven to 350 degrees
- 4 boneless skinless chicken breasts
- 1 can of Campbell's Cheddar Cheese Soup
- 1 cup milk
- 1 1/2 cups Ritz Crackers (one sleeve)
- 4 tablespoons of melted butter (you can use more)
- 8 ounces frozen broccoli
- 4 ounces shredded cheddar cheese
- 1/2 teaspoon seasoned salt
Pork and White Bean Chili

Heat 1 TBS of the oil in a large skillet on medium high heat; add 1/2 of the pork, brown on all sides
- 2 TBS olive oil, divided
- 1 lb boneless pork loin, cut into 1 inch cubes.
- 2 cups chopped onions
- 2 TBS chili powder
- 1 1/2 tsp Ancho Chili Pepper spice (McCormick)
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp Mexican oregano leaves
- 2 cans (15 1/2 oz each) cannellini beans, drained and rinsed
- 1 can (14 1/2 oz) chicken broth
- 1 avocado, peeled, pitted and coarsely chopped
- 2 TBS chopped fresh cilantro
- 2 TBS fresh lime juice

Smoky White Bean Chili with Pork

Brown meat in a large pot; when done, drain excess fat
- 1 lb cooked pulled pork
- 2 garlic cloves, minced
- 1 red onion, chopped
- 2 teaspoons ground cumin
- 1 tablespoon smoked Spanish paprika
- 2 teaspoons chili powder
- 1/2 teaspoon each salt and freshly ground pepper
- 1/3 cup red wine
- 2 14 oz. cans fire roasted tomatoes with garlic
- 2 14 oz. cans white beans
- 1 14 oz. can hominy
- 2 strips precooked bacon
- 1 4 oz. can Green Chilies chopped
Asian Chicken Noodle Soup

When traveling through Atlanta Airport, I always stop at "One Flew South" and get this soup
- 1 t olive oil
- 1 T shallots (small diced)
- 3 oz pulled leg & thigh meat
- 1 t onion (small diced)
- 1 T celery (cut on a bias and blanched)
- 1 T carrots (cut in half, then on a bias)
- 1 T parsley (chopped)
- 8 oz Five spice broth
- 1/2 t green onion (cut on a bias)
- 2 oz soba noodles (cooked)
- 1 T Napa cabbage (chiffonnade)
- Salt & Pepper
- Five spice to taste
Crockpot German Potatoe Salad

Combine all ingredients except parsley and bacon
- 2 potatoes, sliced
- 1/2 c. onions, chopped
- 1/2 c. celery sliced
- 1/4 c. green peppers, diced
- 1/4 c. vinegar
- 1/4 c. oil
- Chopped parsley
- Sliced bacon, cooked and crumbled
