- 2 tsp minced garlic
- 1 Tbsp Dijon mustard
- 1 tsp lite soy sauce
- 3 green onions, chopped
- 1 1/2 tsp fresh grated ginger, or 1/2 tsp ground ginger
- Salt and pepper to taste (optional)
- 1 tsp sesame oil
- 1 recipe Mandarin sauce (optional; see recipe below)

- 1 Tbsp teriyaki sauce
- 1 Tbsp lite soy sauce
- 1 tsp minced fresh ginger
- 1/2 tsp minced garlic
- 1 Tbsp plus 1 tsp honey

- Stove-top version:
- 2 1/2 cups water
- 1/2 cup steel-cut oats
- 1/4 tsp plus 1 dash of salt
- 1/4 cup shredded reduced-fat cheddar cheese
- 2 tsp light whipped butter or light buttery spread
- 2 tbsp chopped scallions
- 1/8 tsp garlic powder
- 1/8 tsp onion powder

- Slow Cooker:
- 4 cups Water
- 1 cup Steel Cut Oats or Organic Steel Cut Oats

- 16- to 18-ounce loaf rustic white bread, cut into 1-inch cubes, about 10 cups
- 4 tablespoons unsalted butter, plus an additional 2 tablespoons melted
- 1 pound yellow onions, diced
- 4 large stalks celery, diced
- 4 cloves garlic, minced
- 1/4 cup finely chopped fresh sage leaves
- Leaves from 4 stalks thyme
- 2 large eggs, beaten
- 2 cups turkey, chicken, or vegetable stock
- 1 teaspoon salt
- Freshly ground black pepper

Place bread cubes on a cookie sheet or other wide, flat pan and bake in a preheated 350°F oven for 10 minutes
- 8 cups bread cubes, made from a firm white bread (about 12 slices); gluten-free sandwich bread is fine
- 1 cup (16 tablespoons) butter
- 4 large onions, finely chopped (about 3 cups)
- 1 cup finely chopped celery stalks (including tops)
- 1/4 cup chopped dried parsley (or 1/2 cup fresh)
- 2 teaspoons poultry seasoning
- 2 teaspoons salt
- 1 teaspoon pepper (less for a milder stuffing)
- 1 to 2 cups chicken broth, optional; if baking the stuffing in a separate dish, outside the turkey

- 1 (8-10 lbs) bone-in Pork Butt
- 1/4 cup Pork and and Poultry Rub, divided
- 1-1/2 cups apple juice

- 1 Tbsp salt
- BBQ sauce of choice

- When you cook a roast, whether it's turkey, chicken, beef, or lamb, you should end up with plenty of browned drippings and fat from the roast when it's finished.
- The "drippings" are browned juices and fat. All of the flavor a gravy you make from the drippings comes from those browned bits. You need fat as a base for the gravy.

- 3 tablespoons extra-virgin olive oil
- 1/4 cup diced tasso or smoked ham
- 1 spring onion, whites and greens separated, thinly sliced
- 1 bulb of green garlic, whites and greens separated, thinly sliced
- 1 1/2 pounds clams or mussels
- 1 can lager, preferably Pabst Blue Ribbon
- 1/4 cup unsalted butter
- 1/4 cup diced tomatoes
- Salt and pepper, to taste
