Preheat oven to 400°. In a 10-in
- 3 tablespoons butter
- 1-1/2 pounds red potatoes, chopped
- 1/4 cup minced fresh parsley
- 2 garlic cloves, minced
- 3/4 teaspoon kosher salt
- 1/8 teaspoon pepper
- 8 eggs
- 1/2 cup shredded extra-sharp cheddar cheese

- 3 (5-pound) roasting chickens
- 3 large yellow onions, unpeeled and quartered
- 6 carrots, unpeeled and halved
- 4 stalks celery with leaves, cut into thirds
- 4 parsnips, unpeeled and cut in half (optional)
- 20 sprigs fresh parsley
- 15 sprigs fresh thyme
- 20 sprigs fresh dill
- 1 head garlic, unpeeled and cut in half crosswise
- 2 tablespoons kosher salt
- 2 teaspoons whole black peppercorns
- 4 cups 1/4-inch-diced carrots
- 4 cups 1/4-inch-diced celery
- 1/4 cup minced fresh dill
- 1/4 cup minced fresh parsley

Ham Pasta Salad Recipe

In a large bowl, toss macaroni with ham, green pepper, tomato and onion
- DRESSING:
- 1 package (7 ounces) shell macaroni, cooked and drained
- 2 cups cubed fully cooked ham
- 1 cup chopped green pepper
- 1 cup chopped tomato
- 1/4 cup chopped onion
- 1/2 cup Miracle Whip
- 1/4 cup grated Parmesan cheese
- 2 tablespoons milk
- 1/4 teaspoon salt
- Additional Parmesan cheese
Guinness and Bailey's Irish Cream Cupcakes

I just made a two layer cake instead with the ganache as the filling
- For the Guinness chocolate cupcakes:
- 1 cup stout beer/ Guinness
- 2 sticks unsalted butter
- 3/4 cup unsweetened cocoa
- 2 cups flour
- 2 cups sugar
- 1 1/2 tsp. baking soda
- 3/4 tsp. salt
- 2 large eggs
- 2/3 cup sour cream
- For the Bailey's ganache filling:
- 8 oz. bittersweet chocolate, finely chopped
- 2/3 cup heavy cream
- 2 tbsp. butter, room temperature
- 2 tsp. Irish whiskey OR Bailey's Irish cream
- For the Bailey's buttercream frosting:
- 8 tbsp. unsalted butter, room temperature
- 3-4 cups powdered sugar, sifted
- 4 - 8 tbsp. Bailey's Irish cream
- (I also used some half&half to thin the frosting out w/o adding more alcohol)

In a large skillet, cook the pork, turkey and onion over medium heat until meat is no longer pink; drain
- 1 lb pound ground pork
- 1 small onion, chopped
- 1 can (8 ounces) sliced water chestnuts, drained and chopped
- 1/3 cup Hoisen sauce
- Splash Soy Sauce
- 1/4 cup egg substitute
- 1-1/2 teaspoons ground ginger
- 1 package (12 ounces) wonton wrappers
- Cooking spray
- Sweet-and-sour sauce, optional

- 1 cup chopped peeled mango
- 1 cup pineapple tidbits
- 1/2 cup diced sweet red pepper
- 1 plum tomato, seeded and chopped
- 3 tablespoons minced fresh cilantro
- 2 green onions, sliced
- 2 tablespoons lime juice
- 1 tablespoon lemon juice
- 1 jalapeno pepper, finely chopped

To make the sauce: Place the tomato sauce, ketchup, cider vinegar, brown sugar, and garlic powder in the crock pot
- 1 cup canned tomato sauce
- 1/2 cup ketchup
- 2 tablespoons, plus 2 teaspoons cider vinegar
- 2 tablespoons, plus 2 teaspoons lightly packed brown sugar
- 2 teaspoons garlic powder
- 12 ounces raw, lean boneless pork tenderloin, trimmed of excess fat
- 12 ounces raw, boneless pork shoulder (the leanest piece you can find), trimmed of excess fat
- Salt and freshly ground black pepper
- 2 cups roughly chopped onion
- Crushed red pepper, optional
- Serving suggestion: Light sandwich buns and rinsed deli cole slaw
