- 1 1/4 pounds of Pork Tenderloin trimmed and cut into 8 slices.
- 1 tsp Salt
- 1/4 tsp Black Pepper
- 1/2 cup reduced-sodium vegetable broth
- 1/4 cup whole-berry cranberry sauce
- 1 tbsp grated orange zest
- 1/2 tsp dried thyme
- 1 (10 oz) package frozen butternut squash puree, thawed
- 3/4 tsp pumpkin pie spice
- 2 tsp unsalted butter
Balsamic Chicken with Mushrooms

Easy to cook. I substitute a dry, white wine for the chicken broth
- 2 tsp Vegatable Oil
- 3 Tbsp Balsamic Vinegar
- 2 tsp Dijon Mustard
- 1 Clove garlic (Medium) Crushed!
- 1 LB Chicken Breast, boneless skinless. Best in 4 oz. pieces.
- 2 Cups mushsrooms, cremini or shitake, - small and halved.
- 1/3 Cup canned chicken broth. OR
- I prefer a dry, white wine (A Blanc of most any sort)
- 1/4 tsp dried Thyme, crumbled.
Warm Curried Chicken Salad

Shredded Chicken salad with apples and couscous
- 1 1/2 cups water
- 1 1/4 tsp curry powder
- 3/4 tsp salt
- 1 cup whole-wheat couscous
- 1 (15 1/2 oz) can chickpeas, rinsed and drained.
- 1 cup shredded cooked chicken breast
- 1 Granny Smith apple, halved, cored, and cut into wedges
- 1 small red bell pepper, cut into thin strips.
- 1/2 small red onion, thinly sliced
- 3 tbps lemon juice
- 2 tsp olive oil
- 6 cups torn romaine lettuce.

Tamari and Garlic Marinated Chicken Thighs with Coconut Rice

Chicken thighs are marinated in a garlic tamari sauce and then cooked on a grill pan
- Coconut rice:
- 12 chicken thighs, boneless, skinless, cleaned of excess fat.
- 2 tablespoons olive oil
- Pepper to taste
- 1/2 cup of tamari
- 1/4 cup rice wine vinegar
- 4 tablespoons honey
- 4 large garlic cloves
- 1 tablespoon fresh ginger
- 4 scallions, thinly sliced on the diagonal
- 2 tablespoons toasted sesame seeds
- 2 cups Jasmine Rice
- 1 1/2 cups water
- 1 can (14 ounce) unsweetened Coconut Milk
- 1 teaspoon salt
