Thai Chicken Pasta

Similar to Pad Thai
- For the dressing
- 1/2 cup olive oil
- 5 large cloves garlic peeled
- 1/2 cup low sodium soy sauce
- 1/3 cup white distilled vinegar
- 2 tablespoons water
- 2 tablespoons honey
- 3 tablespoons sesame oil
- 1 large finger of ginger peeled
- Juice of whole lime
- 3/4 cup peanut butter
- For the salad:
- 9 ounces brown rice noodles
- 1 Costco pkg boneless skinless chicken breast (approx 1 lb)
- 3 large carrots steamed in microwave then cut into chunks
- 2 red or Orange bell peppers cut into chunks
- 1 cup packed cilantro leaves
- 1 whole onion chopped
- 4 oz fresh spinach
- 1 cup packed cilantro leaves
- Peanuts to garnish

- 2 jars pasta sauce (50 oz)
- 1 can diced tomatoes
- 3 c Mozzarella cheese
- 1/2 c. Parmesan Cheese

- Browned Ground beef/turkey/sausage
- Basil
- Oregano
- Italian seasoning

- 9 eggs beaten a little
- 1 1/2 c. Grated cheese
- 3 c milk
- 1 tsp salt
- 1 1/2 tsp dry mustard

Soft Chicken Tacos

Note: Use roast chicken from the supermarket or prepare your own by sauteing chicken breasts
- 2 tsp vegetable oil
- 1/2 c. diced onion
- 2 garlic cloves, chopped
- 1/2 c. tomato sauce
- 1 tsp. ground cumin
- 1/4 tsp. salt
- 2 c. shredded, cooked chicken, skin removed
- 8 small flour tortillas, warmed
- pico de gallo (see recipe) or store-bought salsa
- 1 ripe avocado, peeled, pitted and diced

1. Whisk yogurt, lemon juice, cinnamon, paprika, cayenne, pepper, and salt
- For Chicken:
- 1 c. plain yogurt
- 2 Tbsp lemon juice
- 2 tsp cumin
- 1 tsp cinnamon
- 1 tsp cayenne pepper (ground red pepper)
- 2 tsp black pepper
- 1/2 tsp salt
- 1 1/2 lb. boneless, skinless chicken breast, cut into 2-inch pieces
- For sauce:
- 2 tsp minced garlic (2 cloves)
- 1 Tbsp butter
- 1 jalapeno
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garam masala
- 1/2 tsp. salt (or less)
- 1 (8-oz.) can tomato sauce
- 1 cup heavy cream (maybe try something lighter)
- For garnishes:
- 3 Tbsp chopped cilantro
- White Rice
- Naan (Indian flatbread)

Tomato, Aquash, and Feta Gratin

This is a beautiful dish and a great way to use the nany different seasonal varieties of tomatoes and squash
- 6 oz. zucchini, sliced 1/4 inch thick on a long bias
- 6 oz. yellow squash, sliced 1/8 inch thick on a long bias
- 2 scallions, chopped
- 1 1/2 tsp minced garlic
- 1 1/2 tsp chopped oregano
- 2 oz feta cheese, crumbled
- 12 oz tomatoes, cut in half, then sliced 1/4 inch thick crosswise
- 2 tsp extra virgin olive oil
- salt and pepper to taste
