Gluten Free Red Velvet Cupcakes

Preheat oven to 350 degrees
- 1 cup of butter
- 1 1/2 cups of sugar
- 2 large eggs, at room temperature
- 2 1/2 cups of gluten-free flour blend
- 4 tablespoons of cocoa powder
- 1 teaspoon of baking soda
- 1 teaspoon of salt
- 1 1/4 cups of milk
- 1 teaspoon of white wine vinegar
- 2 tablespoons of red food coloring
- 2 teaspoons of vanilla extract
Healthy-ish Spinach Artichoke Dip

Roughly chop garlic and onions and sauté with olive oil until tender
- 1 15.5oz can of artichoke hearts (packed in water, low salt if possible) drained
- 12 oz spinach, kale or other green (fresh is best)
- 1 small log goat cheese
- 1/2 red onion
- 2-3 cloves garlic
- 1 container plain Greek yogurt (fage 2% worked well
- 1 tbsp olive oil
- Salt and pepper to taste
