Lemon Pancakes

Mix pancake ingredients together
- Pancake Mix:
- /2 c sour cream
- 1 tablespoon unsalted butter
- 1 egg
- 1/2 cup lemon juice
- Lemon Zest 1/2 tablespoon
- 1 cup self rising flour or carb quick
- 2 tsp sugar
- Berry Sauce:
- 1/2 cup strawberries
- 1/2 cup raspberry
- 2 tablespoon sugar
- 1/4 cup fresh orange juice
Champagne Blossom Punch

Combine first 3 ingredients, stirring well
- 1/3 cup frozen orange juice concentrate
- thawed and undiluted
- 1/3 cup frozen lemonade concentrate, thawed and undiluted.
- 1 bottle Riesling, chilled
- 1 bottle champagne, chilled
- Lemon, lime or orange slices, opt.
Seven Layer Dip

- Decide what kind of dish you want to use.
- Spread 1 30oz can of refried beans
- Spread 1 16 oz if the ready made guacamole
- Spread 1 16 oz sour cream
- Pour 1 16oz Salsa
- Dump a small bag of shredded cheese
- Fancy it up sprinkle some chopped green onions, sliced black olives and diced tomatoes
- Voila!

Artichoke Squares

Grease 10 x 6 pan. Cook onion in 2 tsp marinated juice till transparent
- 2 6 oz marinated artichoke hearts
- 1/2 medium onion minced
- 1 clove garlic minced
- 4 large eggs
- 1/4 cup fine dry bread crumbs
- 1/4 tsp salt
- 1/8 tsp oregano, pepper and tabasco
- 1/2 pound sharp cheddar cheese
- 2 tablespoon minced parsley

- Brownie:
- 3/4 stick butter
- 4 ounces unsweetened baking chocolate
- 2 cups Splenda
- 2 teaspoons vanilla
- 4 whole eggs
- 1 egg yolk
- 3/4 cup Carbquik
- 3/4 cup walnut, chopped
- Chocolate Frosting:
- 2 tablespoons butter
- 2 ounces unsweetened baking chocolate, cut into pieces
- 2 cups powdered Splenda
- 2 to 3 tablespoons hot water
- Note: To make powdered Splenda, add the Splenda to a food processor and pulse till very fine. This can also be done in a coffee grinder in smaller batches.
