Lemon Whippersnaps

Mix the cake mix, Cool Whip, and the egg with a spoon
- 1 box lemon cake mix
- 1 8oz container of Cool Whip
- 1 egg, beaten
- 1 cup powdered sugar
Fall Salad with Apples, Walnuts and Stilton

Combine 1st 6 ing in processor, add oil while running, stir in salt and pepper
- 1 tbsp minced shallot
- 1 1/2 tbsp champagne or white wine vinegar
- 1 tbsp lemon juice
- 1 tbsp honey
- 1 tsp dijon mustard
- 1 dried apricot, finely chopped
- 3 tbsp olive oil
- 1/4 tsp salt
- 1/8 tsp pepper
- 2 cupps greens
- 2 cups sliced belgian endive
- 1 oz stilton cheese, thinly sliced or goat cheese
- 1/4 cup walnuts, chopped
- 5oz pkg arugula
- 1 oz prosciutto, torn
- 1 granny smith apple, thinly sliced
Mediterranean Salad

Toss all ingredients but dressing, cover, refridgerate until ready to serve, toss with vinaigrette
- 4 cups mixed greens
- 1 cup chopped plum tomatoes
- 1 cup chopped kalamata olives
- avocado-chopped
- 4 oz feta cheese- crumbled
- 3/4 cup chickpeas, drained and rinsed
- 1/2 cup thin red onion slices
- 1/2 cup basalmic vinegar dressing
Cauliflower Salad

In large bowl, combine all, cover and refridgerate 1 hour
- 1 large head cauliflower, chopped
- 1 1/2 cups salted peanuts
- 7oz package dried cranberries
- 2/3 cup light mayo
- 1/3 cup sugar
Vegetable and Spicy Sausage Soup with Cheese "Crackers"

Heat a large Dutch oven over med-high heat
- 4 oz Light Pork Sausage
- 1 1/2 cups Onions
- 1 1/4 cups Zucchini
- 1 cup Summer Squash
- 1/2 cup Carrots
- 1/3 cup Celery
- 1/2 tsp Kosher Salt
- 2 Garlic Clove
- 2 tbsp Tomato Paste
- 1/8 tsp Red Pepper Flakes
- 3 cups Chicken Broth, Reduced Sodium
- 2 15.5 oz cans Cannellini Beans, Rinsed
- 1/3 cup Half-and-half
- 1 tsp Rosemary, Fresh
- 1/2 tsp Black Pepper
- 5 tbsp Parigiano Reggiano
Pumpkin Dip

Mix all ingredients together
- 2 cups confectioners sugar
- 15 - 16 oz pumpkin puree
- 8 oz cream cheese, softened
- 1 tsp cinnamon
- 1/2 tsp ground ginger or pumpkin pie spice

To prepare fish, combine 1st 7 ing, place 3/4 cup shallot mixture in lg ziploc bag, set remaining aside
- Fish:
- 1/3 cup rice vinegar
- 1/4 cup minced shallots
- 2 tbsp brown sugar
- 2 tbsp minced fresh ginger
- 1 tbsp minced garlic (3 cloves)
- 3 tbsp soy sauce
- 4 6 oz salmon fillets, skinned
- Ginger-Garlic Mayo:
- 2 tbsp mayo
- 2 tbsp plain yogurt
- 1 tsp wasabi paste
- 3/4 tsp grated fresh ginger
- 1/2 tsp rice vinegar
- 1 garlic clove, minced
- Remaining Ingredients:
- 1 tbsp dark sesame oil
- 4 cups baby spinach
- 8 slices ciabatta bread, toasted
