Homemade Tartar Sauce

1. Mix all together in the food processor and pulse for about 10 seconds until finely chopped, but not smooth
- o 1 1/4 cups mayonnaise or 1 1/4 cups Miracle Whip
- o 1 medium dill pickle ( or 1/4 cup dill relish)
- o 2 sprigs parsley
- o 1 tablespoon fresh lemon juice
- o 1 teaspoon dried onion flakes ( or fresh)
- o 1/4 teaspoon Worcestershire sauce
Fried Smashed Potatoes

1. Place potatoes in a large saucepan and cover with at least 1 inch of water
- 12 small red potatoes (1-1/2 to 2 inches in diameter; 1-1/2 to 2 pounds total)
- 1 teaspoon salt
- 1/4 cup olive oil
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3/4 cup freshly grated Parmesan cheese
- 2 tablespoons finely chopped fresh Italian (flat-leaf) parsley
Cretan Meat Pie

Boil some lamb (or any meat you want) in lightly salted water
- Lamb or other meat 1 pound
- Phyllo pastry
- 1 onion (diced)
- Cheeses (Swiss, mozzarella, kefalograviera)
- Nutmeg
- Olive oil
- Oregano
- Salt
- Pepper
Bisquick and Cherries

Mix bisquick, sugar and milk and pour into greased baking dish
- 1 cup bisquick
- 1 cup sugar
- 1 cup milk
- 1 can sour cherries
Chicken Pot Pie

1. Preheat oven to 400 degrees
- 3 tablespoons butter, divided
- 3 carrots, washed & chopped into 1/4″ pieces
- 2 stalks celery, washed & chopped into 1/4″ pieces
- 1 leek, trimmed, washed and chopped
- 1 tablespoon fresh thyme
- 1/2 teaspoon salt
- Freshly ground black pepper
- 2 1/2 cups cooked turkey or chicken meat
- 3.5 oz mushrooms, washed and chopped (I like using chanterelles)
- 1/2 cup white wine (you can substitute broth)
- 2 1/2 cups milk, divided
- 1/4 cup flour
- Zest of 1/2 a lemon
- 2 sheets (or approximately 16 ounces) frozen puff pastry, thawed
- 1 egg, lightly beaten

- 2 pounds good sirloin
- 2 slices white bread
- ½ cup half and half
- 2 eggs
- 1 tablespoon salt

The Trails Potato Salad

Place the potatoes in a medium saucepan with enough water to cover by 1 inch
- 14 • 14 small boiling potatoes, such as Red Bliss (about 2 1/2 pounds), scrubbed well (12 ½ pounds)

Braised Pork Butt with Port and Prunes

- Combine all the herbs and spices for the rub in a small bowl and rub generously all over the meat.

- 1/2 cup dried cranberries
- 1/4 cup sunflower seeds, or pumpkin seeds
- 1/2 cup bacon bits
- 3 tablespoons cider vinegar
- 2 tablespoons sugar
