Red Wine Pot Roast

Fantastic pot roast
- 3 lbs beef chuck roast
- 2 tbs flour
- 2 tbs canola oil
- 1/2 c water
- 1/2 red wine
- 1 tsp dried basil
- 1/2 tsp dried marjoram
- 1/2 tsp tried thyme
- 1 tsp salt
- 1/4 tsp ground pepper
- 1 onion sliced
- 6 red potatoes washed and halved
- 6 carrots peeled and cut into 2 inch lengths
- 8 pearl onions peeled and halved
Southern Cream Apple Pie

Bake pie shell at 350 for 7 minutes
- 1 unbaked pie shell
- 1 1/4 c sugar
- 1/2 c flour
- 1 c sour cream
- 1 egg beaten
- 1/2 tsp vanilla
- 1/4 tsp salt
- 2 cups finely chopped tart apples
- 1 tsp cinnamon
- 1/4 butter
Roast Chicken with Basil, Lemon Butter & Potatoes

- 1 whole chicken
- 1 c thinly sliced fresh basil
- 5 tbs unsalted butter, room temp
- 2 lemons
- 5 cloves garlic, thinly sliced
- 2 green onions, thinly sliced
- coarse sea salt
- freshly ground pepper
- 1 1/4 lbs small potatoes
- 2 tbs extra virgin olive oil
- Italian parsley
All American BBQ Sauce

Combine all ingredients in a saucepan, and cook over low heat for 25 minutes, stirring occasionally
- 3 tbs brown sugar
- 1 tsp ground celery seeds
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 c ketchup
- 2 tbs white wine vinegar
- 1 tbs dijon mustard
- 1/2 tsp lemon juice
- 1/2 tsp liquid smoke
Apple Pie

combine all ingredients and pour into prepared pie crust
- 7-10 apples
- 3/4-1 c sugar
- 2 tbs flour
- 1/8 tsp salt
- 1 tbs cinnamon
- 1/4 tsp nutmeg
Fudge

Butter an 8 x 8 pan. Combine sugar, butter, milk, salt and chocolate in medium saucepan
- 3 c sugar
- 1 c butter
- 1 c whole milk
- dash of salt
- 4 oz unsweetened chocolate
- 1 tsp vanilla
Almond Snowballs

W/electric mixer cream butter, gradually add sugar, beating until light
- 1/2 c butter softened
- 1/2 c sugar
- 1/2 c finely ground almonds
- 1 c flour
- 1/8 tsp salt
- 1 tsp vanilla
- 1 c powdered sugar
Strawberry & Chocolate Tart with Walnut Crust

For crust: Combine flour, sugar and salt in processor and mix
- Crust
- 1 c flour
- 3 tbs sugar
- 1/4 tsp salt
- 1/3 c walnuts
- 1/2 c chilled unslated butter, cut into 1/2 pieces
- 2 egg yolks
- 1/3 c strawberry jam
- Filling
- 3/4 c plus 2 tbs whilling cream
- 6 oz bittersweet or semisweet chocolate, chopped
- 2 1 pint baskets strawberries
mustard crusted rack of lamb

Season rack of lamb well on all sides with salt and pepper
- 1 rack of lamb, trimmed (about 1 1/2 pounds)
- 3/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoons vegetable oil
- 2 tablespoons Dijon mustard
- 2 teaspoons minced garlic
- 1 tablespoon grated Parmesan
Carne Asada

Add the vegetable stock, tomatoes, chipotle peppers, onions and garlic to a Dutch oven and stir to combine
- Carne Asada:
- 2 cups vegetable stock or broth
- 1 (28-ounce) can diced tomatoes
- 2 chipotle peppers
- 1 yellow onion, chopped
- 4 cloves garlic, chopped
- 4 pounds beef round roast
- 2 tablespoons ground cumin
- 2 tablespoons chili powder
- 2 teaspoons salt
- 2 teaspoons freshly cracked black pepper
- Green Salsa:
- 2 poblano peppers
- 4 tomatillos, chopped
- 2 avocados, halved, pitted and flesh diced
- 2 cloves garlic, chopped
- 1 lime, juiced
- 1/4 bunch cilantro, leaves chopped
- 1 tablespoon white vinegar
- Pinch salt and freshly cracked black pepper, plus more for seasoning
- Preheat the oven to 325 degrees F.
