- 1/2 c dry sherry
- 2 tbs soy sauce
- 1 tbs canola oil
- 2 tsp cinnamon

- 1 Tbs butter
- 1 Tbs olive oil
- 3 cloves garlic, minced
- 1 C vodka
- 4 C peeled whole tomoatoes, chopped. Juice reserved
- Crushed red pepper
- Salt
- 3/4 C whipping cream
- 1 c peas

- 4 tsp flour
- 1/2 tsp cinnamon
- 6 peaches
Chicken Pot Pie

Heat butter over low heat until melted
- 1/3 c butter
- 1/3 c flour
- 1/3 c chopped onion
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 3/4 C chicken or turkey broth
- 2/3 C milk
- 2 C chopped chicken or turkey
- 10 OZ mixed vegetables
- 1 can new potatoes
- Pie crust
- 2 C flour
- 3/4 c shortening
- 1 tsp salt
- 1/4 C cold water
- Or can use can of crescent rolls or left over mashed potatoes
Grilled Salmon with Mustard BBQ Sauce

BBQ Sauce Whisk together all ingredients in a bowl, cover and refrigerate for at least 1 hour and up to 24 hours
- Mustard BBQ Sauce
- 1/2 c dijon mustard
- 3 tbs honey
- 1 tbs light brown sugar
- 3 tbs rice-wine vinegar or cider vinegar
- 1 tsp soy sauce
- Tabasco
- 1/4 tsp kosher salt
- 1/4 tsp ground pepper
- Salmon
- 4 filets, 8 oz each
- 2 tbs canola oil
- salt and pepper
Beef Wellington

Pat filets dry and season with salt and pepper
- 8 6oz center cut filet
- 2 tbs veg oil
- 8 large mushrooms
- 2 tbs butter
- 2 tbs finely chopped shallot
- 2 tbs minced garlic
- salt and pepper
- 2 eggs
- Puff pastry
- 1/2 G gorgonzola
- 2 C veal or beef demi-glace
- 4 tbs sherry
Minestrone Soup

Heat oil. Add onions and cook until golden, about 5 to 7 minutes
- 1/3 C olive oil
- 1 C chopped onion
- 1 C diced carrots
- 1 C diced celery
- 1/2 C great northern beans

- 2 C Italian canned tomatoes and their juice

Fresh Cranberry Sauce

Rinse the cranberries well and discard any that are soft of bruised
- 4 cups fresh cranberries
- 1/2 C sugar
- 1/4 C water
- juice of one orange

- 4 oz bitterseet chocolate
- 3 large egg yolks
- 3 TBS granulated sugar, plus 2 TBSplus 1 sugar, plus 1 tsp sugar
- 1 1/4 c sweet dessert wine
- 2 egg whites
- 1/4 c cooled brewed strong coffee
- 1 c ricotta
- 1 c heavy cream
- 4 to 5 ozs lady fingers
- cocoa powder, garnish
