Vegetable Soup

Heat olive oil in a large pot over medium-high heat
- 2 Tbsp olive oil
- 1 1/2 cups chopped yellow onion (1 medium)
- 2 cups peeled and chopped carrots (about 5)
- 1 1/4 cups chopped celery (about 3)
- 4 cloves garlic , minced
- 4 (14.5 oz) cans low-sodium vegetable broth
- 2 (14.5 oz) cans diced tomatoes (undrained)
- 3 cups peeled and 1/2-inch thick diced potatoes (from about 3 medium)
- 1/3 cup chopped fresh parsley
- 2 bay leaves
- 1/2 tsp dried thyme
- Salt and freshly ground black pepper
- 1 1/2 cups chopped frozen or fresh green beans
- 1 1/4 cups frozen or fresh corn
- 1 cup frozen or fresh peas

Preheat oven to 375°. Make sauce: In a small bowl, combine soy sauce, ginger, garlic, and honey

- 4salmon pieces (about 2 lbs.)

The night before, soak the dried chickpeas in water
- 1 cup dried chickpeas, soaked overnight (don't use canned chickpeas)
- 1/2 cup onion, roughly chopped
- 1 cup parsley, roughly chopped (about a one large bunch)
- 1 cup cilantro, roughly chopped (about a one large bunch)
- 1 small green chile pepper, serrano or jalapeno pepper
- 3 garlic cloves
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp cardamom
- 1/4 tsp black pepper
- 2 tbsp chickpea flour
- 1/2 tsp baking soda

- 1 large sweet onion, such as Vidalia (about 1 pound)
- 2 1/2 cups all-purpose flour
- 1 teaspoon cayenne pepper

- 14 oz northern canned beans
- 5 heaping tablespoons of flour
- 1 onion
- ¾ - 1 tsp salt

- 4 c.cauliflower florets, steamed (about 1/2 large cauliflower)
- 1large egg, lightly beaten
- 1 c.shredded cheddar
- 1 c.freshly grated Parmesan
- 2/3 c.rice chex crumbs
- 2 tbsp.freshly chopped chives

- 3 large zucchini, grated
- 2 large eggs, lightly beaten
- 1/2 c. shredded cheddar
- 1/2 c. grated Parmesan
- 1 tsp. dried oregano
- 1/4 tsp. garlic powder
- 1/4 tsp. Kosher salt
- Freshly ground black pepper
