Red Beans and Rice

1. In a large skillet, saute onion, green pepper and garlic in oil until tender
- 1 medium sized onion chopped
- 1/2 cup green pepper chopped
- 2 cloves garlic minced
- 2 T olive oil
- 1/3 cup parsley
- 3 cans red beans, rinsed and drained
- 3/4 cup water
- 1/2 t salt
- 1 t ground cumin
- 1/4 t black pepper
- 1 lb conech sausage
Conech Jambalaya

Saute first 3 ingredients in hot oil in Dutch oven for 4-5 minutes or until sausage is browned
- 1 lg green onion chopped
- 1 lg green bell pepper diced
- 1 lb Coneuch cut into 1/4 " slices
- 1 T olive oil
- 4 c chopped cooked chicken
- 3 c uncooked long grain rice
- 2 10 1/2 oz cans french onion soup, undilute
- 1 14 oz can chicken broth
- 1 14 ox can beef broth
- 2-3 t Creole seasoning
- 2-3 t hot sauch
Five Bean Salad

In a large bowl, combine the first six ingredients
- 1 Can garbanzo beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can great northern beans, rinsed and drained
- 1 can wax beans, rinsed and drained
- 1 can green beans, rinsed and drained
- 2 small onions, chopped
- 1 cup white vinegar
- 3/4 cup sugar
- 1/4 cup canola oil
- salt and pepper
Chicken Teriyaki

1. Combine chicken broth, teriyaki sauce, brown sugar and garlic cloves in large bowl
- Ingredients
- 1 lbs chicken, diced
- 1 cup chicken broth
- 1/2 cup teriyaki sauce
- 1/3 cup brown sugar
- 3 garlic cloves, minced
Macaroni Salad, All American

- Salad:
- 1 cup red onion, chopped
- 1 cup frozen peas, defrosted
- 1 cup carrots, grated
- 1/2 lb thinly sliced deli ham, diced
- 1-1/2 cup mayonnaise
- 2 Tbsp Dijon mustard
- 1/2 tsp garlic powder
- 2 tsp kosher salt
- 1 tsp celery seed
- 4 cups elbow macaroni, cooked, drained, and chilled
- 1 cup celery, chopped
- 1/2 cup red peppers, chopped
- 3 eggs hardboiled and chopped
- Dressing:
- 3/4 cup sour cream
- 3 Tbsp white vinegar
- 1 tsp ground black pepper
- 1 Tbsp sugar
Zucchini Mushroom Bake

Saute garlic and onion. Add zucchini, green pepper, and mushrooms
- 2 cloves garlic minced
- 1/2 c onion chopped
- 2 c zucchini sliced
- 1/2 c green pepper
- 4 eggs
- 1/2 t basil
- 1/4 t salt and pepper
- 2 oz cheese, grated
Chicken, Broccoli, Mushrooms, Pasta

Combine all ingredients except thickening
- 2 chicken breast [cooked]
- 1 lb penne or other whole grain pasta [cooked]
- Fresh or frozen Broccoli
- mushrooms
- chicken broth[2 small or 1 large can]
- Soy sauce [a couple of T]
- Thickening [cornstarch]
Microwave Swedish Meatbals

Combine ground beef, egg, bread crumbs, 1/4 cup milk, onion, parsley, salt, allspice and pepper
- 1 lb. ground beef
- 1 egg
- 1/2 c. dry bread crumbs
- 1/2 c. milk
- 1/4 c. chopped onion
- 2 tsp. parsley flakes
- 1/2 tsp. salt
- 1/8 tsp. ground allspice
- 1/8 tsp. pepper
- 1 can (10 3/4 oz.) condensed cream of mushroom soup
