Cheesy Crock Pot Chicken and Rice

My Wife prefers a higher than originally suggested amount of rice
- 5 chicken breasts thin sliced
- 1 teaspoon garlic salt
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 medium onion chopped
- 1 tablespoons garlic minced
- 2-1/2 cups white rice cooked
- 2 cups chicken stock
- 10.5 ounces cream of mushroom soup
- 10.5 ounces cream of chicken soup
- 8 ounce container sliced mushrooms
- 2 cups cheese cut into 1-inch cubes (you can also use shredded cheese)
- parsley to garnish
Mozzarella Stuffed Slow Cooker Meatballs

Add all ingredients EXCEPT Mozzarella and pasta sauce into large bowl
- Fresh Mozzarella, Cut into 1/2 inch cubes
- 1 lb ground beef
- 1 lb ground Italian sausage
- 1/2 tsp garlic powder
- 2 tsp salt
- 1 tsp black pepper
- 1 cup bread crumbs
- 1/4 cup fine grated Parmesan
- 2 eggs
- 1/2 cup whole milk
- 1/2 cup fresh parsley
- 1 jar Prego Traditional sauce (or similar)
Mexican Stuffed Bell Peppers Slow Cooker

Finely dice 1/2 of a yellow onion
- 1/2 yellow onion
- 1 cup prepared red enchilada sauce
- 4 bell peppers (red, orange and yellow are sweeter than green)
- 1/3 cup of water
- 1 lb ground beef
- 1 cup shredded Jack cheese plus more for topping
- 3/4 cup cooked Mexican rice
- 1 1/2 tsp salt
- 1/2 tsp pepper
- Optional-canned chipotle chile in adobo (to add spice)
- Optional-Sour cream, etc
Skinner's Western Carolina Pulled Pork Sauce

1. Combine all ingredients in a bowl, allow to rest at least 1 hour
- 2 cups Cider Vinegar
- 1 cup Apple Juice
- ¼ cup Brown Sugar
- 1 Tbsp. Salt
- ½ tsp. Cayenne Pepper
- 1 tsp. Black Pepper
- 1 tsp. White Pepper
- 1 tsp. Worcestershire Sauce
Dr. BBQ's Whiskey Spray Mop Sauce

1. Pour all ingredients into a spray bottle
- 1 cup Apple Juice
- 2 Tbsp. Jack Daniels Whiskey
- 1 Tbsp. Soy Sauce
Ranchero Grilled Red Trout

Salt and pepper the meat side of the fish, spray with cooking spray if desired
- Ranchero Sauce:
- Salt and pepper, to taste
- 4 red trout fillets, boned
- Cooking spray, if desired
- Ranchero sauce, recipe follows
- 1/2 large red onion, diced small
- 1 roasted pablano chile, peeled
- 1 red bell pepper, diced small
- 3 pounds, canned diced fire roasted tomatoes (or canned, diced tomatoes)
- 1 tablespoon ground cumin
- 1 teaspoon cayenne
- Salt and pepper, to taste
Firecracker Shrimp-Bonefish Grill Copycat

1 Add 1 inch of oil to a large pot and heat over medium-high heat
- 12 ounces shrimp, peeled, deveined, tail-off
- 1/2 cup flour
- 1/2 cup cornstarch
- 1 teaspoon seasoned salt
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 teaspoon sriracha
- 1 tablespoon diced green onions
- Lettuce leaves for serving
- Vegetable oil, for frying
Country Potatoes

1. Boil potatoes, with skins on, until done (20-22 minutes)
- 12 red or new potatoes
- 6 strips cooked bacon crumbled
- 2 cups sharp cheddar cheese grated
- ½ stick butter melted
- Salt & Pepper
Pizza Pot Pie

Blend together,in the food processor, the cream cheese, mozzarella, and some oregano until smooth
- 1 box Pillsbury Pie crust (2 pack)
- 9 " round cake pan
- 2 cups shredded mozzarella
- 1 lb cooked sausage
- 8 oz. cream cheese
- 1 cup cherry tomatoes, cut in half
- 1/4 cup black olives
- sliced pepperoni, to cover the top
- oregano
- 1 egg for egg wash
Shrimp Bruschetta with Limoncello

My favorite restaurant used to have an appetizer called Shrimp da Zaccaria
- 1/4 cup extra-virgin olive oil
- 2 garlic cloves, thinly sliced
- 12 large shrimp, cleaned with tails left on
- 1 lemon, zest finely grated and juiced
- 1/2 cup limoncello liqueur
- Salt and freshly ground black pepper
- 1 baguette, sliced into 16 slices, or 8 slices country bread
- 1 bunch flat-leaf parsley, chopped to yield 1/4 cup
- another version includes 1/2 cup of white wine with only 2 oz of limoncello
