Chipotle Glazed Carrots

In a medium skillet heat butter, marmalade, garlic salt and chipotle over a medium heat until smooth
- 1 lb Baby Carrots halved lengthwise
- 4 Tbl Butter
- 4 Tbl Orange Marmalade
- 1 tsp garlic salt
- 1 Tbl chipotle paste (or flakes)
Lasagna

Brown ground beef and sausage then drain thoroughly
- 12 Lasagna noodles
- 12 oz can tomato paste
- ¾ cup water
- 29 oz can tomato sauce
- ½ lb ground beef
- ½ lb sausage
- 3 Tbl chopped garlic
- 2 Tbl fennel seed
- 2 Tbl italian seasoning
- 1 Tbl garlic powder
- 1 Tbl garlic salt
- 1 Tbl ground anise
- 2 Tbl sugar
- ¾ lb provel cheese ( shredded )
- ¾ lb Monterey jack cheese ( shredded )
- (mix the shredded cheeses)
- ½ lb yellow American cheese ( keep separate )
- Grated parmesan cheese
Chicken Tortilla Soup

Add 1Tbl olive oil to sauté pan the sear the chickens thighs on both sides 2-3 min per side
- 6 skinless boneless chicken thighs
- 6 10oz cans chicken broth
- 2 chicken bouillon cubes
- 1 med onion chopped
- 2 Tbl chopped garlic
- 8 corn tortillas
- 2 cans diced tomatoes with green chiles ( Rotel original )
- 5 scallions chopped
- 1 1/2 Tbl Adobo seasoning
- 1 Tbl Cumin
- 2 tsp Garlic salt
- 1 avocado diced
- Cilantro
- Grated Monterey Jack cheese
Pork Loin Casserole

layer 1/2 of the sliced potatoes in the bottom of a greased 9x13 casserole dish
- 4 potatoes sliced 1/8 in thick
- 6 tenderized boneless porkloin cutlets 1/4 in thick
- 12 oz mushrooms sliced
- 1 onion sliced 1/4 in thick
- 4 cups grated cheese
- olive oil
- salt & pepper
- garlic salt

Mac & Cheese

Bring water to boil …cook noodles 7 min…then drain rinse with cold water set aside
- 1 lb elbow macaroni noodles
- 1/3 cup veg oil
- 1/3 cup flour
- 6 cups whole milk
- 8 oz velveeta cheese cubed
- 8 oz yellow American cubed
- 8 oz monterrey jack cheese cubed
- 2 oz grated co – jack cheese
- 2 tsp salt
- 1 tsp dry mustard
White Mushroom Lasagna

Grate the Mont Jack and Provel cheeses then mix together Par-boil the lasagna noodles 6-7 min
- 12 Lasagna noodles
- 2 cans cream of mushroom soup
- 15 oz ( 1 ½ cans ) of milk
- 1 lb Provel cheese grated
- 1 lb Monterrey Jack grated
- 1 cup grated Colby-Jack cheese
- 1 Tbl garlic salt
- 1 Tbl garlic powder
- 1 Tbl ground anise seed or ground fennel seed
- 1 Tbl Italian seasoning
- 1 Tbl olive oil
- 1/2 ½ lb sausage
- 1/2 ½ lb ground beef
- 2 lbs sliced mushrooms ( white or cremini )
Green Onion Rice Pilaf

Preheat the oven to 350 degrees F
- 1/8 cup olive oil
- 1/4 cup small diced onion
- 1 teaspoon minced garlic
- 1 cup long grain white rice (rinsed)
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 1 1/2 cups chicken stock
- 1 tsp annatto seasoning
- 3 thinly sliced chopped green onion tops
Lemon Caper Sauce

Reduce wine and broth in a sauce pan by 1/2
- 4 Tbl butter
- 1 Tbl flour
- 1/2 cup white wine
- 3/4 cup chicken broth
- 1 Tbl chopped garlic
- 1/4 cup half & half
- 2 Tbl lemon juice
- 2 tsp capers

To toast nuts: Preheat oven to 350 degrees F (177 degrees C) and place the oven rack in the center of the oven
- 1 cup (100 grams) pecans or walnuts finely chopped
- 2 cups (220 grams) vanilla wafer cookies, finely crushed
- 1/2 cup (55 grams) confectioners sugar (powdered or icing)
- 2 tablespoons (15 grams) cocoa powder (can use dark chocolate)
- 1 1/2 tablespoons light corn syrup (or liquid glucose syrup)
- 1/4 cup (60 ml) bourbon
