Chicken Pot Pie in a Convection Oven

It's quick and easy to make Chicken Pot Pie in your convection oven
- 1/4 cup onion, chopped
- 1/2 cup celery, chopped
- 3 tablespoon vegetable oil
- 1/2 cup all-purpose flour
- 3 cups cooked chicken, chopped
- 1 (10-ounce) pkg frozen peas and carrots-thawed
- 1 (8-ounce) can whole kernel corn-drained, can use 8-ounces of frozen corn
- 1 (2-ounce) jar sliced pimento--drained
- 1/2 teaspoon thyme
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Pastry for 2-crust (9-inch) pie
- Milk, optional

- 3 eggs yolks—well beaten
- 3 ½ tspn – baking powder
- ¾ tspn – salt
- 2 cups – milk
- ¾ cup – spry/oil
- 3 egg whites (stiffly beaten)
Stew (Homemade Soup)

Bring to boil vegetables (2 pckgs frozen veg) Use anything you want Add
- 2 lbs hamburger meat (browned & drained)
- may use stew meat
- 1 16 oz stewed tomatoes
- 3 cans tomato sauce
- 6 cans water
- Vegetables (your choice)
Pasta Salad

In 2-qrt casserole, place snow peas and 1/3 cup water
- PASTA SALAD DRESSING:
- 2 cups fresh snow peas
- 1/3 cup water
- 2 cups broccoli flowerets
- 1/3 cup water
- 2 cups cherry tomatoes, halved
- 2 cups sliced fresh mushrooms
- 1/2 cup black olives--sliced
- 3 oz. pasta twists, cooked
- 1 Tblsp grated Parmesan cheese
- 1 cup hot pepper cheese, cubed
- 1/2 cup green onions, chopped
- 1/2 cup olive oil
- 1/3 cup red wine vinegar
- 2 Tblsp fresh parsley
- 2 cloves garlic, minced
- 2 tspn honey-Dijon mustard
- 1 tsp basil
- 1/2 tsp salt
- 1/2 tsp pepper
Chicken Enchilada Soup

1. Add olive oil to stockpot
- 2 tablespoons Olive Oil
- 1 Small Onion, chopped
- 1 Garlic Clove, minced
- 1 (14 ounces) can Chicken Broth
- 1 (10-3/4 ounces) can Cream of Chicken Soup
- 1 (4 ounces) can chopped Green Chiles
- 2 cups Cooked and Shredded Chicken Breast
- 1-1/2 cups Cold Water or Milk
- 2 cups crushed tomatoes
- 1 teaspoon Ground Cumin
- 1 teaspoon Chili Powder
- 1/2 teaspoon Fresh Ground Black Pepper
- 6 Flour Tortillas, cut into 1/2" strips
- 1/2 pound processed American cheese (Velveeta works
- great!), cut into small cubes
