- 6 oz linguine
- 8 oz. extralean ground beef
- 1 med. onion, chopped
- 1/4 cup chopped carrots
- 2 cloves of garlic
- 1 tsp oregano
- 1 med. zucchini chopped
- 1 can (14.5 oz) diced tomatoes
- 1/2 tsp tomato paste
- 1/4 cup water
- 1/4 tsp salt
- 3 tbsp shredded mozzarella
Salsa

Put all ingredients in food processor and mince
- 28 oz. can tomatoes
- 3-4 cloves of garlic
- 2 tbs jalapeno peppers
- 1 bunch cilantro
- 2 tbs. lemon juice
- chopped onions
- peppers (optional) chopped
- 1 - 2 chili peppers (optional)

- 5 c Flour
- 1 1/2 c Sugar
- 2 Tsp Baking powder
- 1/2 Tsp Salt
- 1 c Shortening
- 1 Tsp Vanilla

Baked Mini Cake Doughnuts

Preheat oven to 425. Spray pan with Pam
- Lemon Doughnuts:
- 1 1/3 c cake flour, sifted
- 1/2 c granulated sugar
- 1 1/4 Tsp baking powder
- 1/8 Tsp ground nutmeg
- 3/4 Tsp salt
- 1/2 c buttermilk
- 1 egg, lightly beaten
- 1 1/2 Tbsp butter, melted
- Omit nutmeg
- Add 1/2 Tsp grated lemon zest
- Vanilla Glaze:
- 1 c confectioners' sugar
- 1 Tbsp milk
- 1/2 Tsp vanilla extract

- Small bottle of maraschino cherries, drained, halved
