Terry's favorite Eggplant recipe
- 1/4 cup all purpose flour
- 1/2 tsp Italian herbs
- 1 medium eggplant, peeled and cut crosswise into 1/2 inch slices
- 1 beaten egg
- 1/4 cup cooking oil
- 1/3 cup grated Parmesan cheese
- Spaghetti Sauce
- 6 oz slice mozzerella cheese

- 1 16 oz can pumpkin
- 3/4 cup sugar
- 1/2 tsp salt
- 1 1/2 tsp cinnamon

- 1 cup evaporated milk

This originated in a Bon Appetite magazine, but have changed it to my family's likings! It has a loyal following...
- 4 cups fresh cranberries
- 1 1/2 cup sugar
- 2 tablespoons minute tapioca
- 1/2 tsp ground cinnamon

- 3/4 cup chopped pecans
- 1/2 cup peeled chopped oranges or clementines

Victorian Currant Cakes

- 2 cups currants or raisins
- 1 cup brandy
- 2 cups granulated sugar
- 2 egg yolks
- 3/4 tsp ground nutmeg
- 3/4 tsp ground cinnamon
- 2 cups whole-wheat flour
- 3 cups all-purpose flour
- 2 cups room temperature light marg, stick form
Ginger Cake

The recipe is for one layer
- 1 1/4 cups all purpose-flour (about 5 1/2 ounces)
- 1/2 tsp. ground ginger
- 1/2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/4 tsp salt
- 1/2 cup packed dark brown sugar
- 4 1/2 Tabls. butter, softened (you can also use additional applesauce or oil)
- 1 large egg
- 1/3 cup applesauce
- 1/2 cup molasses
- 1/3 cup flat Guinness stout

One of our favorite Christmas cookies
- 1 1/2 cup oat flour
- 1 1/4 cup all-purpose flour
- 1 cup whole-wheat flour
- 2 1/2 tablespoon baking powder
- 1/3 teaspoon salt
- 1 1/4 teaspoon cinnamon
- 1/3 teaspooon alspice
- 1 cup butter
- 2 cups sugar
- 1 1/4 teaspoon vanilla
- 4 1/2 (liquid) eggs
- 1 1/8 cup finely ground blanched almonds
- NOTE: to make oat flour, grind 1 3/4 cup quick or regular oats in a food-processor with a metal blade until they are as fine as flour, about 1 min.

- coating:
- 3 cups all-purpose flour
- 2 cups whole wheat flour
- 2 1/2 tablespoons instant decaf coffee
- 1 teaspoon salt
- 1 1/4 teaspoon baking powder
- 1 1/4 cup softened margarine
- 1 7/8 cup packed light brown sugar
- 5/8 cup granulated sugar
- 5/8 cup cream ( I use fat free half & half)
- 2 1/2 cups semisweet chocolate chips
- 5/8 cup water
- 7/8 teaspoons vanilla
- 3 3/4 cups finely chopped almonds or pecans
- 5/8 cup granulated sugar
