- 6 roma tomatoes, diced
- 2 cloves garlic, chopped
- 2 cloves garlic, peeled

- 2 1/4 teaspoons balsamic vinegar
- 2 tablespoons chopped fresh basil

- 1/4 teaspoon fresh cracked pepper

- 3 tablespoons oil (or as needed to cover bottom of the saucepan can use butter or half of each)
- 1 medium onion, finely chopped
- 3 garlic cloves, chopped (can use more)
- 1 (10 3/4 ounce) can cream of mushroom soup, undiluted
- 1 1/2 cups water
- 1 cup milk
- 1/2 cup grated parmesan cheese (more to mix in after cooking if desired)

True Southeastern North Carolina BBQ Sauce

True SE NC BBQ Sauce never contains ketchup or syrups
- 2 cups cider vinegar
- 1 tablespoon peppercorn
- 1 teaspoon celery seed
- 1 teaspoon salt
- 1 tablespoon hot pepper flakes

These make the best onion rings! try to use panko for this it will really make a difference to the texture, use la
- 2 large sweet onions, peeled and sliced thin into rings
- 2 eggs
- 1/2 cup buttermilk
- 1 3/4 cups all-purpose flour
- 1 teaspoon seasoning salt (or regular salt, can use less than 1 teaspoon if desired)
- 1 teaspoon garlic powder
- 1 pinch cayenne pepper (optional but good to add in, I use lots as we like extreme heat)
- 2 tablespoons cornstarch
- 1/2 cup dry breadcrumbs (preferably panko bread crumbs)

Preheat smoker to 225 to 250 degrees F (110 to 120 degrees C)
- 1 (10 pound) whole turkey, neck and giblets removed
- 4 cloves garlic, crushed

- 1 cup dry breadcrumbs (even better, use panko breadcrumbs)
- 1/4-1/3 cup parmesan cheese
- 1 teaspoon seasoning salt
- 1/2-1 teaspoon ground black pepper
- 1/2-1 teaspoon garlic powder
- 1 cup prepared ranch salad dressing (use bottled salad dressing, you might need a bit more dressing)
- 1/4 cup melted butter (no substitutes)
