Heat Olive Oil in Lg. Pan
- 2-3 Lbs. Flank Steak Pounded Thin
- 1 Tbsp. Olive Oil
- 1 Large Onion Cut in Slices
- 2 Cans Diced Tomatoes
- 2 Lg. Cloves Garlic Minced
- 3/4 Cup Vinegar
Chicken Halves (Grilled)

For best results: Grill the chicken halves skin side down on medium heat, until light and golden
- Spice Rub:
- 1 whole chicken, cut in half (about 4 pounds)
- cooking oil (such as olive, vegetable, or canola)
- 1 tablespoon paprika
- 1 teaspoon granulated garlic
- 1 teaspoon fresh ground black pepper
- 1/2 teaspoon dried thyme, crumbled*
- 1/2 teaspoon rosemary, chopped*
- 1/2 teaspoon dried oregano, crumbled*
- 3/4 teaspoon salt
- Note: If using fresh herbs, triple the amount.

- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon fine sea salt
- 1 cup) light brown sugar
- 1/2 cup unsalted butter, at room temperature, or 1/2 cup virgin olive oil
- 1 teaspoon pure vanilla extract
- 1 teaspoon instant coffee granules or 2 tablespoons strong cooled coffee -- this is just to deepen the chocolate flavor, you won't taste it in the finished product
- 3 large eggs
- 2 cups unpeeled grated zucchini, from about 1 1/2 medium zucchini
- 1 cup) good-quality bittersweet chocolate chips, or chopped chocolate
- Confectioner's sugar (optional)

Heat oven to 350°F. Combine sour cream, cream cheese and Italian seasoning in small bowl
- 1/2 cup sour cream
- 1 (8-ounce) package cream cheese, softened
- 1 teaspoon Italian seasoning*
- 1/2 cup pizza sauce
- 2 ounces (1/2 cup) chopped pepperoni
- 1/4 cup sliced green onions
- 2 ounces (1/2 cup) shredded Mozzarella cheese
- Crisp breadsticks or corn chips
Mac and Cheese

- 1/4 cup butter
- 1/4 cup all-purpose flour
- 4 cups milk
- 1-1/2 teaspoons salt
- 1 teaspoon dry mustard
- 1/2 teaspoon ground black pepper
- 2 (8 ounce) packages elbow macaroni
- 4 cups shredded sharp Cheddar cheese
- 2 (8 ounce) packages processed American cheese, cut into strips

- 15 oz can black beans (don't drain)
- 1 1/2 cups water
- 1/2 tsp cumin
- 1 bay leaf
- pinch oregano
- salt and pepper to taste
