Pressure Cooker Sausage & Spinach Soup

Great flavors in this very simple soup
- 19 ounce package Johnsonville Italian sausage
- 1 medium red onion, diced
- 6 cups chicken stock
- 1 6-10 ounce bag of baby spinach
- 5 medium redskin potatoes, cut into 1-1/2 inch chunks
- 1 tablespoon minced garlic (3 medium)
- 1 teaspoon sugar
- 1 teaspoon Italian Seasoning
- 1/4 teaspoon crushed red peppers
- 1 bay leaf
- 1/2 cup heavy cream
Slow Cooker Italian Sausage and Peppers

This is adapted from several recipes
- 2 pkgs (10 Sausages) fresh Italian Sausage links, cut in half (I use Johnsonville)
- salt and pepper to taste
- 2 yellow onions, thinly sliced
- 3 medium green bell peppers, sliced
- 4 cloves garlic, chopped
- 1 15 ounce can tomato sauce
- 1 28 ounce can crushed tomatoes (Muir Glen, Red Gold or Hunts)
- 1/2 cup chicken broth
- 1/4 teaspoon red chili pepper flakes
- 1 tablespoon dried basil or 3 Tablespoons fresh, chopped
- 1 tablespoon Italian Seasoning
- 1 tablespoon fresh grated parmesan cheese (optional)
Bisquick Taco Casserole

This is adapted from a Betty Crocker recipe
- 2 lb. ground round, drained
- 1/4 cup taco sauce (I use Taco Bell)
- 1/4 teaspoon ancho chili pepper
- 1/4 teaspoon chili powder,
- 1 teaspoon taco seasoning, divided into 2 1/2 teaspoons
- 1 cup sour cream
- 2/3 cup light mayonnaise (can use regular mayo)or re
- 1 cup grated Cheddar cheese, may use more
- 1/2 medium onion, diced
- 2 cups Bisquick
- 1/2 cup cold water
- 3-4 medium tomatoes, sliced thin or 14 ounce can diced tomatoes, drained
- 1 cup green pepper, diced
- Paprika
Kathy's Southern Style Green Beans

I adapted this from the Kopper Kettle Inn in Morristown Indiana
- 6 cups water or enough to cover ingredients
- 48 ounces of frozen green beans, thawed OR
- 3 pounds fresh green beans, cleaned and snappped
- 2 to 4 ham hocks or 2 ham shanks if you prefer more meat, wrapped in cheesecloth
- 1 large onion, halved and wrapped in cheesecloth
- 2 tablespoons brown sugar
- 1 teaspoon salt or to taste
- 1/2 teaspoon black pepper to taste
Super Sloppy Joes

This is a variation of a Rachael Ray recipe
- 2 pounds ground round or 85% lean ground beef
- 1/3 cup brown sugar, packed
- 1 tablespoon steak seasoning, such as mccormick brand montreal seasoning
- 1 medium onion, chopped
- 1 medium red bell pepper, chopped
- 1 1/2 tablespoon red wine vinegar
- 1 1/2 tablespoon Worcestershire sauce
- 2 1/2 cups tomato sauce
- 3 1/2 tablespoons tomato paste
Roasted Shrimp Cocktail

Easy and much much better than boiled shrimp!
- For the shrimp:
- 2 pounds (16/20 count) raw shrimp
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- For the sauce:
- 1/2 cup Heinz chili sauce
- 1/2 cup Heinz ketchup
- 3 tablespoons prepared horseradish
- 2 teaspoons freshly squeezed lemon juice, plus lemon zest for topping
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon Tabasco sauce
Zatarain's Baked Kielbasa and Shrimp Jambalaya

This uses Zatarain's Jambalaya Mix with my preferred cooking methods and ingredients
- 4 3/4 cups water
- 2 packages ZATARAIN'S Jambalaya Mix, Original
- 1 tablespoons olive oil
- 1 package (13 to 16 ounces) smoked kielbasa, sliced into 1 inch pieces
- 1 pound large raw 16/20 ct shrimp, shelled and deveined
Easy Orange Grilled Chicken

In a large bowl or a large resealable plastic bag add all the ingredients except salt and chicken and combine well
- 4 boneless skinless chicken breasts
- 1/4 cup of orange juice
- 3 tablespoons lime juice
- 3 tablespoons vegetable oil (I use cannola)
- 1 tablespoon honey
- 1 garlic clove finely chopped
- 1/8 teaspoon black pepper or to taste
- 1/4 to 1/2 teaspoon salt
- optional ingredients for a more complex flavor
- 1/4 cup soy sauce
- 1 teaspoon fresh minced ginger
- 2 teaspoon sesame oil
Slow Cooker Salisbury Steak

I prepared the patties and sliced the onion the night before and stored them in the fridge in air tight containers
- Beef Patties
- 2 pounds ground beefextra lean
- 1/2 cup seasoned italian breadcrumbs
- 1 whole egg
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup minced onion
- Gravy
- 8 ounces (2 cups) sliced mushrooms
- 1 medium onion thinly sliced
- 1 envelope Recipe Secrets Onion Soup Mix
- 1/4 cup all-purpose flour
- 1 1/2 cups beef stock
- 1/4 cup fresh parsley, chopped
- 2 tablespoons balsamic vinegar glaze (optional)
Asian Meatballs with Lettuce Cups

Preheat the oven to 400. For meatballs Cover a large high rimmed cookie sheet or roasting pan with foil
- For Meatballs
- 2 pounds ground pork
- 12 ounces sweet Italian sausage, casings removed (I use 3 Johnsonville links)
- 2 tablespoons freshly grated ginger (divided in half)
- 2 small shallots, minced
- 3/4 cup finely chopped water chestnuts
- 8 teaspoons soy sauce (divided in half)
- 2 tablespoons roughly chopped fresh cilantro
- Kosher salt
- 2 heads bibb or butter lettuce, leaves separated
- For Sauce
- 1 tablespoon cornstarch
- 3 tablespoons water
- 3 garlic cloves, minced
- 1 1/2 cups.chicken stock
- 2 tablespoons packed brown sugar
- 1 teaspoon chili paste
