Broccoli Sausage Pie

So easy to prepare, and slam packed with flavor
- 2 pks chopped frozen broccoli
- 1-2 lbs. sausage (5 links), casing removed and crumbled
- 1/4 tsp. garlic salt
- 1 egg beaten
- 2/3 - 3/4 cup milk
- Mozzarella cheese, shredded
- 2-3 Tbs. flour
- 1-2 medium onions (finely chopped)
- 2 pks refrigerated crescent rolls (When ready to line baking dish, pull 1 pack out of refrigerator - do not pull second pack until actual moment of use. Crescent rolls spread best when cold.)
- 3-6 ozs. cream cheese, softened
Chili Macaroni

- 12 ounces lean ground beef or uncooked ground turkey
- 1/2 cup chopped onion (1 medium)
- 1 14 1/2 ounce can diced tomatoes and green chilies
- 1 1/4 cups tomato juice
- 2 teaspoons chili powder
- 1/2 teaspoon garlic salt
- 1 cup dried wagon wheel macaroni or elbow macaroni
- 1 cup frozen cut green beans
- 1 cup shredded cheddar cheese (4 ounces) (optional)
- Tortilla chips (optional)
Quinoa With Latin Flavors

Cilantro, lime and scallions lend a bright finish to delicate quinoa
- 1 cup quinoa
- 2 teaspoons canola oil
- 1 medium onion, chopped
- 1 4-ounce can chopped green chiles
- 2 cloves garlic, minced
- 1 14-ounce can reduced-sodium chicken broth, or vegetable broth
- 1/4 cup pepitas, toasted (pumpkin seeds)
- 3/4 cup coarsely chopped fresh cilantro
- 1/2 cup chopped scallions
- 2 tablespoons lime juice
- 1/4 teaspoon salt
Homemade Beef Stock

- 4 beef marrow bones
- 4 oxtails
- 4 beef shanks
- 6 carrots, scrubbed and cut into chunks
- 6 celery stalks, washed and cut into chunks
- 1 yellow onion, paper left on, cut into quarters
- 10 cups of water
- drizzle of olive oil
- kosher salt

Rosemary Raisin Pecan Crisps

These light, easy-to-make crackers are an absolute taste explosion and one of my party food favorites
- 2 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups buttermilk
- 1/4 cup brown sugar
- 1/4 cup honey
- 1 cup raisins
- 1/2 cup chopped pecans
- 1/2 cup roasted pumpkin seeds, (optional)
- 1/4 cup sesame seeds
- 1/4 cup flax seed, ground
- 1 tablespoon chopped fresh rosemary

This dish is based on tortilla Espanola
- 1 tablespoon olive oil
- 1/2 medium onion, thinly sliced
- 1 red bell pepper, stem, ribs, and seeds removed, then thinly sliced in strips
- 2 russet potatoes (about 1 pound), peeled and cut into thin slices
- Coarse salt and ground pepper
- 8 large eggs
- 2 teaspoons chopped fresh rosemary
Jelly Doughnut Muffins

These are a cross between a fried jelly doughnut and a moist muffin
- 1 cup milk
- 4 1/2 tablespoons canola oil, divided
- 1/4 cup light cream cheese
- 1/3 cup sugar
- 1 teaspoon salt
- 2 large eggs
- 3 cups unbleached white flour, use 1/2 cup more, if needed, in kneading step
- 1 packet active dry yeast, or about 2 teaspoons
- 1/2 cup jelly of your choice, boysenberry, raspberry, and cherry work well

- 1 heaping tsp. instant yeast
- 2 tsp. flaky sea salt (or 1 tsp. regular salt)

- 2 new potatoes, thinly sliced with a vegetable peeler
