Curried Carrot Soup With Cornbread Croutons

Slow cookers are just the best when the weather turns warm and breezy
- 1 clove garlic, chopped
- 1 to 2 teaspoons mild gluten-free curry powder, or to taste (can subsitute with regular curry powder)
- 1 leek
- 4 large carrots
- 1 sweet potato
- half a banana squash, butternut will do in a pinch
- 1/2 teaspoon sea salt
- 1 teaspoon chili powder
- 2 tablespoons jalapenos, chopped
- fresh water, as needed
- sea salt, to taste
- olive oil
Parmesan and Thyme Crackers

Some store bought are quite good but most are basically cardboard with salt
- 1/4 pound
- unsalted butter, 1 stick, at room temperature
- 4 ounce
- Parmesan cheese, grated; about 1 cup
- 1 teaspoon
- thyme leaves, minced
- 1/2 tseaspoon
- kosher salt
- 1/2 teaspoon
- ground black pepper, fresh
- 1 1/4 cup
- flour
Golden Rum Cake

1. Preheat oven to 325 degrees F (165 degrees C)
- 1 cup chopped walnuts
- 1 (18.25 ounce) package yellow cake mix
- 1 (3.4 ounce) package instant vanilla pudding mix
- 4 eggs
- 1/2 cup water
- 1/2 cup vegetable oil
- 1/2 cup dark rum
- 1/2 cup butter
- 1/4 cup water
- 1 cup white sugar
- 1/2 cup dark rum
Cornmeal-Crusted Chicken Nuggets With Blackberry Mustard

Tossing chicken tenders with cornmeal gives these chicken nuggets great crunch without deep-frying
- 1 cup fresh blackberries, or raspberries; finely chopped
- 1 1/2 tablespoons whole-grain mustard
- 2 teaspoons honey
- 1 pound chicken tenders, cut in half crosswise
- 1/2 teaspoon salt
- 1/4 teaspoon ground pepper, freshly
- 3 tablespoons cornmeal
- 1 tablespoon extra-virgin olive oil
MAPLE FUDGE

Combine all ingredients in a medium saucepan
- 2 c Sugar Granulated
- 1 c Maple syrup
- 1/2 c Light cream; 10%
- 2 tb Butter

This colorful carrot and apple curried soup is both simple and delicious
- 1 tablespoon extra-virgin olive oil
- 1 large onion, chopped, about 2 cups
- 1 stalk celery, finely chopped
- 1 tablespoon curry powder
- 5 large carrots, peeled and thinly sliced, about 3 cups
- 2 large McIntosh or other apples, peeled and coarsely chopped, about 3 cups,
- 1 bay leaf
- 4 1/2 cups reduced-sodium chicken broth
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 2 tablespoons low-fat plain yogurt, for garnish (optional)
- 1 tablespoon chopped fresh parsley, dill or basil for garnish (optional)
