In a large bowl, combine the first eight ingredients
- 1/3 cup all-purpose flour
- 1/3 cup whole wheat flour
- 2 tablespoons sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon pumpkin pie spice
- 1/8 teaspoon ground cinnamon
- Dash salt
- 1/2 cup fat-free milk
- 1/3 cup vanilla yogurt
- 1/3 cup canned pumpkin
- 1 egg, lightly beaten
- 1 tablespoon canola oil
- 1/8 teaspoon vanilla extract
- Maple syrup
Pina Colada Fruit Salad

This delicious salad is a snap to prepare
- 3 cups seedless red and white grapes
- 1 1/2 cups fresh blueberries
- 1 1/2 cups halved fresh strawberries
- 1 can pineapple chunks, drained
- 1/2 cup fresh raspberries
- 1 can frozen sugar free pina colada mix, thawed
- 1/2 cup SUGARLESSe™
- 1/2 cup pineapple-orange juice
- 1/8 teaspoon almond extract
- 1/8 teaspoon coconut extract

A general basic smoothie recipe
- 1-2 cups high water fruit/vegetables (grapes, oranges, watermelon)
- Add banana, raspberries, strawberries, blueberries, blackberries, cherries, peaches, pears, apples (cored), pineapple, cantaloupe, honeydew, mangos, kiwi, papaya, etc.
- Add sweetener if necessary
- Protein power if desired
- Powdered milk causes the smoothie to become creamy like a milkshake OR low-fat yogurt.
- 1-2 cups ice

Slow cooker recipe
- 1 1/4 lb boneless skinless chicken thighs, cut into 3/4-inch pieces
- 1 cup julienne carrots (1 1/2x1/4x1/4-inch pieces)
- 1/2 cup chopped celery (1 medium stalk)
- 1/2 cup chopped onion (1 medium)
- 1 teaspoon dried thyme leaves
- 1 carton (32 oz) Progresso® chicken broth (4 cups)
- 1 can (10 3/4 oz) condensed cream of mushroom with roasted garlic soup
- 1 package (16 oz) gnocchi (not frozen)
- 1 package (9 oz) Green Giant® frozen baby sweet peas, thawed
Slow Cooker Chocolate Pudding

- 1 pkg. (3.9 oz.) JELL-O Chocolate Instant Pudding
- 3 cups cold milk
- 1 pkg. (2-layer size) chocolate fudge chocolate cake mix
- 2 squares BAKER'S Semi-Sweet Chocolate, coarsely chopped
- 2 cups thawed COOL WHIP Whipped Topping
Roasted Vegetable Tostadas with Chipotle Cream

A great Meatless Monday dish
- Vegetables:
- Vegetable oil cooking spray
- 2 medium zucchini, cut into 1/2-inch cubes
- 1 red bell pepper, cored, seeded and cut into 1/2-inch pieces
- One 1-pound butternut squash, peeled, seeded and diced into 1/2-inch cubes (3 cups)
- 1/4 cup extra-virgin olive oil
- 2 teaspoons ground cumin
- 1 1/2 teaspoons dried oregano
- 1 teaspoon kosher salt
- Tostadas:
- Six 6 1/2 or 7 1/2-inch diameter corn or whole grain tortillas
- 1/2 cup extra-virgin olive oil
- Chipotle Cream:
- 1 canned chipotle pepper, finely diced
- 1 cup sour cream or refrigerated egg-free mayonnaise, such as Vegenaise
- 1 tablespoon fresh lime juice
- 1 teaspoon agave

White Chocolate Buttercream Icing

Put the chopped white chocolate into a small bowl
- 1 C. unsalted butter, softened
- 2 1/2 C. powdered sugar (or more, depending on desired consistency)
- Pinch of salt
- 6 oz. good quality white chocolate, chopped
- 1/4 C. heavy whipping cream
- 1/4 tsp. vanilla extract
