- Roasted Cauliflower
- 2 1/2 cups dry white wine
- 1/3 cup olive oil
- 1/4 cup kosher salt
- 3 Tbsps fresh lemon juice
- 2 Tbsps unsalted butter
- 1 Tbsp crushed red pepper flakes
- 1 tbsp sugar
- 1 bay leaf
- 1 head of cauliflower, leaves removed
- Whipped Goat Cheese And Assembly
- 4 oz fresh goat cheese
- 3 oz cream cheese
- 3 oz feta
- 1/3 cup heavy cream
- 2 Tbsps olive oil plus more for serving
- Coarse sea salt (for serving)
Basic Green Chile Sauce

1. Defrost 2 pounds of frozen Chile which when cleaned makes about 1 ½ pounds
- Optional ingredients to taste:
- 2 pounds frozen Green Chiles
- 3 cups water
- 4 cloves garlic – roasted, peeled and finely chopped
- 1/2 teaspoon Cumin or Turmeric and/or Garlic salt
- Onion salt
- Salt and Pepper to taste

- 1 teaspoon garlic salt
- 1/3 cup shredded Parmesan cheese

Southwestern Angel Hair Casserole

1. Prepare pasta following package directions for "al dente"
- 16 oz box of Angel Hair Pasta - broken into small pieces
- 3 Tbsp Butter or Margarine (I use margarine)
- 2 Tbsp All-Purpose Flour
- 2 cups Milk (I use Fat-Free)
- 1 tsp EACH of Tabasco sauce, Cumin, Chili Powder and Salt
- 1/2 tsp Pepper (I use White Pepper)
- 3 cups (or more!) of Sharp Cheddar Cheese (I use a combination of cheeses)
- 5-6 oz jar of Sliced Green Olives
- 4-5 oz can of Sliced Black Olives
- 3-4 Roasted and Peeled New Mexican Green Chilies (if you don't have fresh available, you can substitute with 2 4-oz cans of diced green chilies)
Spicy Smashed Avocado and Asparagus with Dill Havarti Grilled Cheese

Preheat an oven or toaster oven to 450 degrees Fahrenheit
- 1/2 lb asparagus, ends trimmed
- Extra virgin olive oil
- Kosher salt and freshly ground black pepper
- 1/2 lemon
- 1 avocado, peeled, halved and pitted
- 1/8 tsp teaspoon cayenne pepper
- 4 slices Eureka! Saaa-Wheat organic bread
- 3-4 Tbs butter
- 4 oz Arla Dofino® Dill Havarti, coarsely shredded
GUATAMALAN CEVICHE

Peel and clean shrimp. Place in colander and rinse with hot water until slightly pink (not entirely cooked!!)
