  • 1 onion, chopped
  • 6 tablespoons margarine
  • 1/3 cup all-purpose flour
  • salt and pepper to taste
  • 4 cups milk
  • 3 cups chicken broth
  • 1 carrot, shredded
  • 1 cup broccoli florets
  • 1/2 cup chopped celery
  • 1 pound processed cheese food (eg. Velveeta), cubed
  • Fresh minced Garlic to taste
  • Can sub 1 c. of Cream for Milk for richer taste.

Preheat oven to 350 degrees Combine first 4 ingredients and press into 8-inch pie plate

  • For the crust:
  • 1 cup cheese cracker crumbs (We used Cheese-Its crackers)

  • 3 to 4 slices bacon, cooked and crumbled, drippings reserved
  • 2 tablespoons poppy seed (optional)
  • For the pie filling:
  • 3 cups onion, sliced thinly
  • 1 cup cheddar cheese, grated

  • ½ teaspoon pepper
  • 6 to 8 slices of bacon, cooked and crumbled
