Colette's Smoked Sausage Fritatta

1. Preheat an oven to 400 degrees F (200 degrees C)
- 1 1/2 cups smoked sausage, sliced
- 1/4 cup diced onion
- 6 eggs
- 1/2 cup milk
- 1/4 cup sour cream
- salt and pepper to taste
- 1 1/2 cups shredded Cheddar cheese,
- divided
Cheese Soup w/Broccoli

Awesome soup that you can adjust easily
- 1 onion, chopped
- 6 tablespoons margarine
- 1/3 cup all-purpose flour
- salt and pepper to taste
- 4 cups milk
- 3 cups chicken broth
- 1 carrot, shredded
- 1 cup broccoli florets
- 1/2 cup chopped celery
- 1 pound processed cheese food (eg. Velveeta), cubed
- Fresh minced Garlic to taste
- Can sub 1 c. of Cream for Milk for richer taste.
Bacon Onion Pie

Preheat oven to 350 degrees Combine first 4 ingredients and press into 8-inch pie plate
- For the crust:
- 1 cup cheese cracker crumbs (We used Cheese-Its crackers)
- ¼ cup melted butter, melted
- 3 to 4 slices bacon, cooked and crumbled, drippings reserved
- 2 tablespoons poppy seed (optional)
- For the pie filling:
- 3 cups onion, sliced thinly
- 1 cup cheddar cheese, grated
- 3 eggs, slightly beaten
- ½ teaspoon pepper
- 6 to 8 slices of bacon, cooked and crumbled
- 1 cup milk

In a large saucepan combine carrot, celery and onion; add broth
- 1 cup Carrot -- chop fine
- 1/4 cup Celery -- chop fine
- 1/4 cup Onion -- chop fine
- 1 3/4 cups Chicken broth
- 2 cups Milk
- 1/4 cup All-purpose flour
- 1 dash Salt
- 1 dash Pepper
- 1 1/2 cups Swiss, Cheddar, or Jack -- shred or cube

- 1/4 cup garlic and herb seasoned dry bread crumbs

- 1 clove garlic, minced
- 1/4 teaspoon dried dill weed
- 1/4 teaspoon celery salt

- 1 4 ounce jar pimentos
- 1 8 ounce can water chestnuts, drained and chopped
- 2 14 1/2 ounce cans green beans, drained and rinsed
- 3 cup diced cooked chicken
- 1 medium onion, peeled and diced
- 2 tablespoon butter or vegetable oil
- 1 cup mayonnaise
- 1 6 ounce box long-grain wild rice, cooked according to package directions
- 1 cup grated sharp cheddar cheese
- 1 pinch salt
