Weight Loss Casserole - Instant Pot

Instant Pot Instructions: Turn Instant Pot to saute setting
- 2 tbsp olive oil
- 2 cup diced onion
- 16 ounce white mushrooms, quartered
- 2 tsp kosher salt
- 2 tsp garlic powder
- 1 1/2 tsp black pepper
- 1 tsp dried thyme leaves
- 1 tsp dried rosemary leaves
- 1 cup chicken broth
- 3 1/2 pounds (28 ounces) chicken tenderloins
- 2 (12 oz) bag frozen broccoli florets
- 4 tbsp cornstarch
- 2 cup cottage cheese

- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon kosher salt

Method : In a saucepan fry the finely chopped onion and when its soft ass the cinnamon and mixed spice
- For the onions & potatoes you need:
- 6 large round marrows, stem cut ,washed and take the inside pulp out,using a teaspoon or melon baller. I discarded the pulp but if you wish you can use it with the filling.
- 750 g minced lamb or minced meat of your choice.
- 1 large finely chopped onion
- 4 tablespoons tomato paste
- 1/2 cup tomato passata
- 3 finely chopped cloves
- 2 tablespoons grated cheese
- 1/2 cup finely chopped parsley
- 1 beaten egg

- 2 bayleaves
- 1/2 teaspoon mixed spice
- 1/2 teaspoon ground cinnamon

Heat oil in large pot over medium heat
- 1/4 cup extra-virgin olive oil
- 4 large garlic cloves, finely chopped
- 1 28.2-ounce can peeled tomatoes in puree with basil
- 1/2 cup Kalamata olives, halved, pitted
- 3 anchovy fillets, chopped
- 1 1/2 tablespoons drained capers
- 1 teaspoon dried oregano
- 1/2 teaspoon dried crushed red pepper
- 3/4 pound spaghetti
- 2 tablespoons chopped fresh Italian parsley
- Grated Parmesan cheese
Pasta with Anchovy Ragu

- 400 g of spaghetti
- 400 g of anchovies
- 500 g of tomato sauce
- 4 spoonfuls of olive oil
- Parsley (a handful)
- Salt and peppe
- Green olives
- Capers
- Cherry tomatoes, halved
Spaghetti with Puttanesca

1. Place spaghetti in a large skillet, sauté pan, or saucepan and cover with water
- 1/2 pound (225g) dried spaghetti
- Kosher salt
- 6 tablespoons (90ml) extra-virgin olive oil, divided
- 4 medium cloves garlic, thinly sliced or finely chopped by hand
- 4 to 6 anchovy fillets, finely chopped
- Large pinch red pepper flakes
- 1/4 cup capers, drained and chopped
- 1/4 cup chopped pitted black olives
- 1 cup (225g) whole peeled tomatoes, preferably San Marzano, roughly broken up by hand
- Small handful minced fresh parsley leaves
- 1 ounce (30g) finely grated Pecorino Romano or Parmesan cheese, plus more for serving
- Freshly ground black pepper
- 1 (5-ounce; 140g) can oil-packed tuna (optional)

Healthy Tuna Stuffed Avocado

Instructions: Scoop out some of the avocado from the pitted area to widen the "bowl" area
- 1 avocado, halved and pitted
- 1 (4.5 oz) cans tuna, drained
- 1/4 cup diced red bell pepper
- 1 tablespoons minced jalapeno
- 1/4 cup cilantro leaves, roughly chopped
- 1 tablespoon lime juice
- salt and pepper (to taste)
