Lynda's Cornbread

Mix all ingredients and pour into a greased 9x12 pan or muffin tins
- 2 pkgs. Jiffy Cornbread Mix
- 4 Eggs slightly beaten
- 1/3 cup of oil
- 1 cup sour cream
- 1 small can cream corn
Nadeans Salad

Combine lettuce, watercrest, cheese and walnuts
- Dressing:
- Romaine Hearts ( get the 3 in 1 package)
- Watercrest ( no stems)
- 1 1/2 pkgs. of crumbled Gorgonzola or feta cheese
- 1 Cup and 1/2 of Walnuts
- Balsamic vinegar up to water line of salad dressing botle
- 1 pkg. of good seasonings Italian dressing
- Oil past the oil line
- Little water
Crusty Bread

- 3 cups unbleached all purpose flour
- 1 3/4 teaspoons salt
- 1/2 teaspoon Instant or Rapid-rise yeast
- 1 1/2 cups water
Easy and Healthy Shrimp

In a large nonstick skillet, heat the oil
- 4 tsp olive oil
- 1 1/4 pounds med raw shrimp, peeled and deveined (tails left on)
- 6-8 garlic cloves, minced
- 1/2 cup low sodium chicken broth
- 1/2 cup dry white wine
- 1/4 cup fresh lemon juice
- 1/4 cup + 1 T minced parsley
- 1/4 tsp salt
- 1/4 tsp freshly ground pepper
- 4 lemon wedges
- In a large nonstick skillet, heat the oil. Saute the shrimp until just pink, about 2-3 minutes. Add the garlic and cook stirring constantly, about 30 seconds. With a slotted spoon transfer the shrimp to a platter and keep them warm.
- In the skillet, combine the broth, wine, lemon juice, 1/4 cup of the parsley, the salt and pepper; and bring it to a boil. Boil uncovered, until the sauce is reduced by half.
- Spoon the sauce over the shrimp. Serve garnished with the lemon wedges and sprinkled with the remaining tablespoon of parsley. Enjoy! ~7 — with
Penne Pasta

Brown Garlic and onion, cook pasta, mix and add tomatoes and other ingredients
- Penne Rigate
- 4 large cans plum tomatoes (sento) cut up and get rid of seeds and juice
- 6-7 pieces of garlic
- 1 whole onion
- 1/2 bag fresh basil
- Sea Salt
- Olive oil
Texas Trash Warm Bean Dip

DIRECTIONS: Preheat oven to 350 degrees
- 1 (8 ounce) package cream cheese, softened
- 1 cup sour cream
- 2 cans (16 ounces, each) refried beans
- 1 packet taco seasoning
- 2 cups cheddar cheese, shredded
- 2 cups monterey jack cheese, shredded
Potato Puffs

Directions Preheat oven to 400 degrees F
- Ingredients
- 3 cups of mashed potatoes
- 2 eggs
- 1/3 cup sour cream (optional extra for serving)
- 1 heaping cup shredded sharp cheddar cheese
- 2 tablespoons grated Parmesan
- 2 tablespoons chopped chives or parsley
- Salt and black pepper, to taste
Skinny Coconut Shrimp

- Ingredients:
- 1 lb (24) large raw shrimp, peeled and deviened (weight after peeled)
- 1/2 cup + 1 tbsp shredded sweetened coconut
- 1/2 cup + 1 tbsp panko crumbs
- 2 tbsp all purpose flour (you will only use 1 tbsp)
- 1 large egg
- pinch salt
- non-stick spray (I used my misto)
- For the Sweet and Spicy Dipping Sauce:
- 1/2 cup apricot preserves (you can use sugar free if you wish)
- 1 tbsp rice wine vinegar
- 3/4 tsp crushed red pepper flakes
Roasted Sweet Potatoes

- Ingredients:
- 3 Sweet potatoes, peeled and cut into bite size cubes
- 2 tsp olive oil
- 1 tbsp butter
- 1 tbsp of brown sugar (more if you want it sweeter)
- 1 tsp of ground cinnamon
- 1/4 tsp of ground nutmeg
- Pinch of ground ginger
- Sea salt, to taste
