- 4 cups low salt chicken stock
- 1 smoked shank
- 5 slices bacon
- 8 oz diced ham
- 1 onion chopped
- 1 bell peppers diced
- 2 celery stalks chopped
- 1 jalapeño diced
- 2 cloves garlic minced
- 4 cups fresh Spinach leaves
- 8 fresh thyme sprigs
- Salt and pepper to taste

- 2 Lbs, raw E-Z peel Shrimp
- 2 1/2 cup Basic Shrimp Stock***
- 1/4 Fat or Oil (can be: Chicken, Pork or Beef Fat) I( have used olive oil and bacon fat)
- 2 1/2 Cup diced onions
- 1 3/4 Cup chopped celery
- 1 1/2 cup diced bell pepper
- 4 T butter
- 2 t minced garlic
- 1 bay leaf
- 2 t salt
- 1 t cayenne
- 1 1/2 t white pepper
- 3/4 t black pepper
- 1 1/2 t Tobasco sauce
- 1 T dried thyme
- 1 1/2 t dried basil
- 3 cups peeled and chopped tomatoes (3 to 4)
- 1 1/2 Cup canned tomato sauce
- 2 t sugar
- 5 cups cooked rice
- Make Stock with Shrimp Shells, 5 cups of water,onion ends and pieces, celery leaves and ends, and bell pepper pieces, season with salt and pepper, strain and save for the Shrimp Creole and the rest for cooking the rice!***

- 4 Yukon Gold, red potatoes or baker potatoes, unpeeled, scrubbed
- Drizzle for each layer or so of extra-virgin olive oil.
- Kosher Salt
- Fresh Ground Pepper
- Fresh and chopped Oregano, Rosemary and Thyme, added the same time as pepper!

- For the pork loin:
- 1 cup warm water, plus 1 cup cold water
- 1 cup cider vinegar
- 1/2 cup sugar
- 2 tablespoons salt
- 1 (2 1/2 to 3-pound) pork loin
- 1/4 cup ground coffee beans
- 3 tablespoons dark brown sugar
- 2 tablespoons whole peppercorns
- 3 whole star anise
- 1 (1/2-inch) piece cinnamon stick broken into small pieces
- 3 tablespoons unsalted butter
- 3 tablespoons canola or vegetable oil
- For the sauce:
- 1/2 pound bacon, diced
- 2 cups demi-glace or 1 package demi-glace mix dissolved in 1 cup water
- 1 cup red wine
- 1 cup pineapple juice, from canned pineapple tidbits
- 1/2 cup pineapple tidbits

Brown Irish Soda Bread

Basic Traditional Brown Irish Soda bread
- 3 cups (12 oz) of wheat flour
- 1 cup (4 oz) of white flour (do not use self-rising as it already contains baking powder and salt)
- 14 ounces of buttermilk (pour in a bit at a time until the dough is moist)
- 1 teaspoon of salt
- 1 1/2 teaspoon of bicarbonate of soda
- 2 ounces of butter if you want to deviate a bit.
