Congo Squares

Sift flour and baking powder together
- 2 3/4 cups sifted flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 2/3 cup shortening or butter - melted
- 2 1/4 cups brown sugar (1 lb pkg)
- 3 eggs
- 1 cup nuts (optional)
- 1 large bag choc chips
Tortellini Soup

1. In a large pot, bring broth, water and Italian seasoning to a boil
- 3 cupsvegetable broth
- 3 cupswater
- 1/2 teaspoondried Italian seasoning
- 1 package (9-ounce)cheese-filled spinach tortellini
- 3 largecarrots, peeled and sliced into thin coins
- 3 ribs celery, thinly sliced
- 3/4 poundripe plum tomatoes (about 4), seeded and chopped
- 1 bag (6-ounces)baby spinach
- Grated Parmesan cheese (optional)
Oven Roasted Fish Dinner

1. Heat oven to 450. Spray jelly roll pan with cooking spray 2
- ½ cup Bisquick
- ½ cup yellow cornmeal
- 1 tsp dried oregano leaves
- ½ tsp salt
- 1 to 1 ½ pounds fish fillets
- ½ cup plain fat-free yogurt
- 1 medium zucchini, cut into 1 inch pieces (1 ½ cups)
- 1 medium red onion, cut into wedges
- 1 medium red bell pepper, cut into 8 pieces
- 1 tbsp olive or veg oil
- ½ tsp lemon pepper seasoning salt
Summer Squash Casserole

In a saucepan, cook sliced squash and chopped onion in boiling salted water for minutes
- 2 pounds yellow summer squash sliced (6 cups)
- ¼ chopped onions
- 1 can condensed cream of mushroom
- 1 cup dairy sour cream
- 1 cup shredded carrot
- 1 8-ounce package herb seasoned stuffing mix
- ½ cup butter or margarine melted
Banana Choc. Chip Muffins

-Mix flour, baking powder, baking soda and slat in separate bowl
- 1 ½ cup flour
- 1 ¼ cup baking powder
- 1 ¼ t. baking soda
- 1/2 t. salt
- 2 eggs
- 2 ½ cup mashed bananas (~6)
- 1 ½ cup packed brown sugar
- 1/3 cup veg. oil
- 1/3 cup buttermilk
- 1/2 t. vanilla
- 1/2 cup pecans
- 1 cup mini choc chips
Easy Shrimp Scampi

In a large pan, heat the oil over medium heat
- 1 lb. uncooked shrimp, peeled and deveined
- 3 TB. olive oil
- 3 TB. butter
- 1/4 Cup chicken stock (or 1/4 tsp. CHICKEN SOUP BASE in 1/4 Cup water)
- 1 tsp. BASIL (Shan uses FRENCH)
- 1 tsp. salt
- 1 tsp. freshly ground BLACK PEPPER
- 1 shallot, diced or 1 TB. freeze-dried SHALLOTS
- 2 garlic cloves, diced or 1/2 tsp. GRANULATED GARLIC POWDER
- 12-16 oz. cooked spaghetti, penne or your favorite pasta
- 1/4 Cup chopped fresh parsley

- 3 1/2 cups oats
- 1/2 cups coconut
- 3 Tablespoons flax seeds
- 1/4 cups sunflower or pumpkin seeds
- 1/2 cups slivered almonds or nuts
- 2 teaspoons cinnamon
- 1 teaspoons sea salt
- 1/2 cups brown sugar
- 1/4 cups canola oil
- 2 Tablespoons honey
- 1 Tablespoons maple syrup
- 2 teaspoons vanilla
- 2 cups dried fruit

1) Combine all ingredients in a large soup pot
- Ditalini noodles

Cider-Glazed Carrots with Pumpkin Seeds

Preheat oven to 450 degrees
- 1 pkg (2 lbs) Food You Feel Good About Organic Carrots, trimmed, peeled
- 2 Tbsp Wegmans Basting Oil
- 2 cups Wegmans Apple Cider
- 1 Tbsp Wegmans Clover Honey
- 1 Tbsp Wegmans Lemon-Dill Finishing Butter (Dairy Dept)
- Salt and pepper to taste
- 2 Tbsp organic tamari pumpkin seeds (Bulk Foods)
Potato-Fennel Gratin

- 2 small fennel bulbs
- 1 yellow onion, thinly sliced
- 2 tablespoons good olive oil
- 1 tablespoon unsalted butter
- 2 pounds russet potatoes (4 large potatoes)
- 2 cups plus 2 tablespoons heavy cream
- 2 1/2 cups grated Gruyère cheese (1/2 pound)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
