- 3-4 TBSP Butter
- 3-4 TBSP Extra Virgin Olive Oil
- 4 Eggs

Moussaka is a special dish for me personally
- MEAT SAUCE:
- 1 large eggplant
- 2 large russet potatoes
- 1/2 cup olive oil
- Salt to taste
- 2 to 3 tablespoons olive oil
- 1 pound ground beef
- 1/2 cup tomato paste
- 1/2 cup tomato puree
- 1/2 cup red wine
- 1 bay leaf
- 1 tablespoon dry oregano
- 1 tablespoon garlic powder
- 1/2 teaspoon allspice
- 1 teaspoon honey
- Salt, to taste
- BECHAMEL SAUCE:
- 6 tablespoons butter
- 1/2 cup flour
- 2 1/2 cups milk
- 1/2 cup Parmigiano-Reggiano cheese, grated
- 3 egg yolks
- 1/4 teaspoon grated nutmeg
- 1/4 teaspoon cinnamon
- TOPPING:
- 1/3 cup Pecorino-Romano cheese, grated

- 1 Cup Chicken Stock

- Juice of One Whole Lemon

- 1 lb Ground Beef
- 10 Fresh Flour Tortillas or 20 Fresh Corn Tortillas
- 4 Cups of Fresh Shredded Cheddar Cheese (Medium or Sharp)
- 2 Cups of Fresh Sliced Mushrooms
- 2 Cups of Fresh Diced Zucchini
- 1 1/2 Cups of Fresh Diced Yellow Onion
- 1 TBSP of Fresh Crushed or Pureed Garlic (Not Minced or Chopped)
- 2 Cups of Fresh Salsa (Mild or Hot)
- 1 Cup of Diced Green Chile (Mild or Hot)
- 1/2 Cup Spanish Olive Oil
- 2 TBSP Dried Cumin Powder
- 2 TBSP Dried Mexican Oregano Powder (Not Flakes)

- 1 lb Ground Beef (70/30)
- 3-4 Slices of Bread (French, Italian or Whole Wheat)
- 3 TBSP Garlic Powder
- 1 TBSP Kosher Sea Salt
- 1 TBSP Crushed Red Pepper Flakes
- 6-8 TBSP of Extra Virgin Olive Oil
- 1/2 Cup of Heavy Cream
- 1/2 Cup of Whole Milk
- 1/4 Cup of Grated Parmigiana Reggiano
- 1/4 Cup of Grated Pecorino Romano
- 1/3 Cup of Flour
Kevin's Famous Brussel Sprout Gratin

This will be your favorite way to enjoy brussel sprouts
- Cream Sauce:
- 1 1/2 to 2 LBS Fresh Brussel Sprouts, washed, stem ends trimmed off outer leaves removed, sprouts cut lengthwise through core (halve if brussel sprouts are small, quarter if they are large)
- 1 TSP Kosher Salt
- Pinch of Fresh Ground Black Pepper to taste
- 2 to 3 TBSP of Unsalted Butter (slightly melted)
- 2 TBSP Water
- 3 TBSP Unsalted Butter
- 1 Large Onion, Diced
- 3 TBSP All-Purpose Flour
- 1 Cup Whole Milk
- 1 Cup Heavy Cream
- Pinch of White Pepper to taste
- Pinch of Nutmeg to taste
- Topping:
- 1/2 to 2/3 cup of freshly grated comté or gruyere cheese

- 1 tablespoon Extra Virgin Olive Oil
- 1/8 cup bacon, diced (Dry Salami or Pancetta)
- 1/8 cup chopped Green Onion
- 1/4 cup Extra Virgin Olive Oil
- 1 tablespoon of pureed garlic
- 3 to 4 tablespoons flour
- 1 tablespoon garlic powder
- 1 tablespoon of Kosher Sea Salt

- 1 tablespoon paprika (sweet or hot)
