Cream Cheese Mints

Mixture will be dry. Mix ingredients in a bowl (best if use dough hooks on your mixer)
- 1 (8 ounce) package cream cheese
- 1 (2 lb) package powdered sugar
- 10-11 drops peppermint extract (scant 1/4 tsp)
- food coloring (optional)
- granulated sugar (for rolling)
Mom's Gooey Butter Cake

Grease a 9x13 dish. Combine cake mix and margarine
- 1 pkg yellow cake mix
- 1 stick magarine (melted)
- 8 oz. cream cheese
- 2 eggs
- 1 box powdered sugar less 1/4 cup
Baked Oatmeal

Preheat oven to 325 degrees
- 2 cups oatmeal (quick cooking or old fashioned)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 eggs, beaten
- 1/2 cup applesauce, I use chunky
- 1/2 cup brown sugar
- 1 cup vanilla yogurt, for topping
Sweet and Sour Meatballs (or Sausages)

Combine jelly and chili sauce in a crock pot an stir until smooth
- 1 12 oz jar Chili Sauce
- 1 16-18oz jar grape jelly*
- 2 lb frozen meatballs or 2-3 packages cocktail sausages
Mimi's Blueberry Cheesecake

Grease and flour a 9 x 13 in
- Crust:
- ½ pound vanilla wafers
- ½ cup chopped pecans
- 1/3 cup melted butter
- 1/3 cup granulated sugar
- Cream Cheese Filling:
- 2 eggs
- 8 ounces cream cheese, softened
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- Blueberry Filling:
- 4 cups fresh blueberries
- 1 cup water
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- Juice of ½ lemon
- Topping:
- ½ pint whipping cream
Mimi's Eggplant Parmesean (Parmigiana Di Melanzane)

- 4 large eggplants
- 4 oz. sliced Mozzarella
- 1 clove garlic
- Flour
- 2 hard boiled eggs
- 2 tsp. chopped basil
- ½ lb. can of tomatoes
- 2 oz. grated parmesan cheese
- Oil for frying
Mimi's Carmel Corn

Butter a large roasting pan or two pans 9 x 13 in
- 2 cups brown sugar
- 2 sticks margarine or butter
- ½ cup white Karo
- 1 teaspoon Vanilla
- 1 teaspoon salt
- ½ teaspoon soda
Bacon Wrapped Chicken Skewers

- 1 lb. boneless skinless chicken breasts or thighs
- 8 About 8 oz. lean bacon, NOT thick-sliced (thick bacon is too hard to work with in this recipe)
- 1 large can pineapple chunks (you won't use all of them)
- Homemade Teriyaki sauce (the best!) or Kikkoman Teriyaki Baste and Glaze
- Kebab skewers or toothpicks
Pumpkin Roll

Beat eggs and sugar. Add pumpkin and lemon juice, mixing well, then dry ingredients
- 3 eggs
- 1 cup sugar
- 2/3 cup canned pumpkin
- 1 teaspoon lemon juice
- 3/4 cup flour
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- Filling
- 1 (8 ounce) package cream cheese
- 4 tablespoons margarine
- 1 cup powdered sugar
- 1/2 teaspoon vanilla
Mimi's CREOLE JAMBALAYA

Cook sausage until browned in a large Dutch oven
- 1 pound smoked sausage, sliced
- 1 to 1 1/2 pounds ground beef
- 1 cup chopped green pepper
- 1 cup chopped onion
- 1 clove (I use more) of garlic, diced
- 1 tablespoon all-purpose flour
- 1 (28 oz.) can diced tomatoes, undrained
- 2 1/2 cups water
- 2 tablespoons chopped fresh parsley
- 2 cups uncooked regular rice (Uncle Ben's Converted)
- 2 tablespoons Worcestershire sauce
- 2 teaspoons salt
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper (I use Tony's Creole seasoning to taste)
