Cook sausage until browned in a large Dutch oven

  • 1 pound smoked sausage, sliced
  • 1 to 1 1/2 pounds ground beef
  • 1 cup chopped green pepper
  • 1 cup chopped onion
  • 1 clove (I use more) of garlic, diced
  • 1 tablespoon all-purpose flour
  • 1 (28 oz.) can diced tomatoes, undrained
  • 2 1/2 cups water
  • 2 tablespoons chopped fresh parsley
  • 2 cups uncooked regular rice (Uncle Ben's Converted)
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons salt
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper (I use Tony's Creole seasoning to taste)
