  • 2 Tbsp vegetable oil
  • 1 onion, peeled and sliced
  • 2 lb (500g) chicken breast, skinless, boneless and sliced

  • 1 tbsp chili powder
  • 1/2 tsp each salt, pepper, ground cumin and dried oregano
  • 1 chipotle pepper in adobo sauce, minced (optional)

  • 4 cups salsa (or 2 1/2 cups pasta sauce and 1 1/2 cups salsa)
