Fudgy Popsicle (Dairy Free)

Mix all the ingredients in a small food processor
- 1 ripe Avocado
- 2 tbsp of unsweetened cocoa powder
- 1 tbsp of raw honey or preferred sweetener
Gluten and Dairy Free Pumpkin Muffins

Preheat oven to 350° F / 176° C Lightly spray a 12-cup muffin pan with cooking spray
- Ingredients for Crumble Topping:
- 1 1/2 cups gluten-free all purpose flour mix (see notes)
- 1 1/2 teaspoons gluten-free baking powder
- 1 1/2 teaspoons baking soda
- 1/8 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon guar gum OR xanthan gum (IF the GF all purpose flour mix you use does NOT contain gum)
- 1 small, cored and minced apple (peeled optional)
- 1/2 cup finely chopped dried figs
- 1/4 cup light brown sugar
- 2/3 cup light organic canned coconut milk OR milk if you prefer
- 3 large eggs
- 2 tablespoons light olive oil
- 3 tablespoons canned pumpkin puree (don't use premixed pumpkin pie mix)
- 1 tablespoon mayonnaise
- 1 teaspoon vanilla extract
- 1/2 cup chopped walnuts (optional)
- 1/4 cup gluten-free all purpose flour mix
- 1/4 cup packed brown sugar
- 3/4 teaspoon cinnamon
- 1 tablepoon Spectrum All Vegetable Shortening OR butter if you prefer
Power-Packed Protein Crumbles

Dump the oats through the salt in a bowl and mix well
- 1 1/2 cups oats (I used Bob's Red Mill Gluten-Free Oats)
- 1/2 cup unsweetened shredded coconut
- 1/2 cup raisins (optional)
- 1/2 cup chopped walnuts
- 2 heaping scoops vanilla protein powder
- 2 tablespoons chia seeds
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1/2 teaspoon powdered stevia
- 1/4 teaspoon salt
- 1/4 cup coconut oil, melted
- 1/2 cup creamy roasted almond butter
Pumpkin-Sweet Potato Soup Recipe

In a heavy soup pot, heat the olive oil over medium heat, and sauté the onion for about 5 minutes until softened
- 2 tablespoons olive oil
- 1 medium onion, diced
- 4 medium carrots, peeled, chopped
- 2 celery stalks, chopped
- 1/4 to 1/2 teaspoon ground ginger, to taste
- 1/4 teaspoon nutmeg
- 1/2 teaspoon curry powder- mild or hot, to taste
- Dash of sea salt and freshly ground pepper, to taste
- 1 14.5-oz. can pumpkin (or 2 heaping cups fresh, peeled and cubed)
- 1 medium sweet potato, peeled, cubed
- 6 cups light vegetable broth
- 2-3 tablespoons dry sherry or white wine, if desired
- 1/2 can coconut milk , to taste
- Lime zest for garnish

Preheat the oven to 400 deg F or 200 deg C

Paleo 'Grain Free, Dairy Free' Lasagna

Directions Preheat oven to 350 degrees
- Meat Sauce
- 2 lb Italian Sausage – browned
- 1 Eggplant skinned and cubed
- 1 medium onion chopped
- 4 cloves garlic minced
- 29 oz Natural tomato sauce
- Basil, oregano, parsley to taste
- Layers
- 2 tbs olive oil or coconut oil
- 4 fresh zucchini – thinly cut length wise
- 3 cups asparagus chopped
- 2 cups carrots chopped
- 2 cups diced tomatoes
- 3 cups spinach
- “Paleo Ricotta cheese”
- 1 Cup Raw Macadamia Nuts (you could also use Pine Nuts or Cashews), covered with water and soaked for at least 2 hours
- 1 T. Lemon Juice
- 1 clove garlic
- 1/2 tsp. Sea Salt
- 1 Green Onion, sliced
- 1 T. Fresh oregano, chopped
- 1 T. Fresh rosemary, chopped
- 2 T. Fresh Parsley (flat leaf), chopped
Paleo Crockpot Sweet Potato Basil Soup

Place all ingredients in the crockpot
- 2 sweet potatoes or yams, diced
- 1/2 yellow onion, sliced
- 1 (14oz) can of coconut milk
- 1 cup vegetable broth
- 2 garlic cloves, minced
- 1 tablespoon dried basil
- salt and pepper, to taste
Jamaican Patties (Gluten Free)

Pastry: In a bowl, add the egg whites, cream of tartar and almond milk
- Pasrty:
- 2 large eggs, separated
- 1 tsp cream of tartar
- 1/2 cup of plain almond milk (vanilla flavoured can be used and will not affect the flavour)
- 2 tbsp extra virgin coconut oil
- 1/2 cup + 2 tbsp coconut flour, sifted
- 1 tsp curry powder
- 1/2 tsp baking powder
- Dash of salt
- Filling:
- 1/4 pound (250 grams) raw ground beef
- 1/4 cup of onion, finely diced
- 1/4 tsp curry powder
- 1/4 tsp dried thyme
- 1/4 tsp salt
- 1/4 tsp ground pepper
- Optional to add some heat 1/4 tsp cayenne pepper or scotch bonnet pepper, chopped
Cashew Cream 'cheese'

- 2 cups raw unsalted cashews – soak for approximately 6 hours or overnight
- juice of half a lemon
- 1/2 tsp salt
- 3/4 cup water

- 1 tsp vanilla
