- 2 teaspoons sugar
- 1 ½ teaspoons instant or rapid-rise yeast
- 1 teaspoon salt
- 2 plus 2 tablespoons cold water
- 2 tablespoons extra-virgin olive oil
- Cornmeal
- 12 ounces sweet Italian sausage, casings removed
- 12 ounces whole-milk mozzarella cheese, shredded (3 cups)
- ½ teaspoon dried oregano
- SAUCE
- 1 (8-ounce) can tomato sauce
- 1 tablespoon tomato paste
- 2 teaspoons sugar
- ½ teaspoon Italian seasoning
- ½ teaspoon fennel seeds

- 1 1/4 T Worcester sauce

- 1 T dryed Theyme
- Kosher Salt
- 2 c flour
- 3/4 t cayenne pepper1 t paprika
- 1 t garlic powder
- 1 t onion powder
- 1 t pepper
- 1 T butter
- 2 T canola oil

- 2 T canola oil
- 1 large white onion, thinly sliced

- 1 1/2 cups (12 fl. oz./375 ml) heavy cream
- 1 garlic clove, minced
- 1 tsp. chopped fresh rosemary
- 1 tsp. chopped fresh thyme
- 1/2 tsp. chopped fresh sage
- Salt and freshly ground pepper, to taste
- 2 lb. (1 kg) russet potatoes
- 1/2 onion, thinly sliced
