Preheat oven to 425. Dice potatoes in salad size pieces

  • 3 -4 lbs baby potatoes
  • 2 cups corn (frozen or canned)
  • 1 2 red onion, medium dice
  • 3 -5 garlic cloves, lightly smashed
  • 1 2 lb bacon, crumbled
  • 1 4 - 1 3 cup parmesan cheese
  • 1 3 cup sour cream
  • 1 3 cup mayonnaise
  • 1 teaspoon horseradish
  • 2 tablespoons lemon juice
  • 1 tablespoon dill
  • salt
  • fresh pepper
  • olive oil
