Berry Berry Ice Cream (Nelson Borges)

Crush rennet tablets into a small bowl with the cold water and set aside
- 2 cups (500 mL) whole milk
- 2 cups (500 mL)35% cream
- 7 heaping tbsp (105 mL) SPLENDA® No Calorie Sweetener, Granulated
- 1 tbsp (15 mL) lemon juice
- 1/2 cup (125 mL) strawberries
- 1/2 cup (125 mL) raspberries
- 2 tbsp (30 mL) cold water
- 2 rennet tablets (Junket)
Buttery Corn Bread Recipe

1. Preheat oven to 400°. In a large bowl, cream butter and Splenda until light and fluffy
- 2/3 cup butter, softened
- 1 cup Splenda
- 3 eggs
- 1-2/3 cups 2% milk
- 2-1/3 cups all-purpose flour
- 1 cup cornmeal
- 4-1/2 teaspoons baking powder
- 1 teaspoon salt
Boston Baked Beans

Soak beans overnight in gallon of water
- 2 lb. dry small white or pea beans
- 1 med. onion
- 1/4 lb. fat back salt pork; optional
- 1 tsp. dry mustard
- 1/2 tsp. ground cloves
- 1 c. molasses
- 1/2 c. dark brown sugar, packed
- 1 tsp. salt
Curried Paneer and Peas

Saute onion in oil. Add tomatoes, cumin seeds, spices, and paneer
- 1 block of paneer, cubed
- 1 cup of green peas
- 1 large onion, sliced
- 3 tbsp oil
- 2 tomatoes, diced
- 1 tsp cumin seeds
- 1 tsp ground ginger
- 1 tsp ground garlic
- 1 tsp salt
- 1 tsp tumeric powder
- 1 tsp garam masala
- 1/2 tsp hot chili powder
- 1 tsp fenugreek leaves
- 1 cup water
- 1/4 cup cilantro, chopped
Oriental Beef Pot Roast

Rub roast with mixture of garlic powder, mustard and pepper
- 4-lb. roast of beef
- 1 tsp. garlic powder
- 1/2 tsp. dry mustard
- 1/4 tsp. pepper
- 2 Tbsp. oil
- 3/4 cup water
- 3 Tbsp. honey
- 2 Tbsp. soya sauce
- 1 Tbsp. vinegar
- 1 1/2 tsp. celery seed
- 1/2 tsp. ginger
- 1 Tbsp. cornstarch, dissolved in 2 Tbsp. water
Creamy Scalloped Potatoes

Cut potatoes into thin slices to measure about 4 cups
- 2 lbs potatoes (about 6 medium)
- 3 tbsp margarine or butter
- 3 tbsp flour
- 1 tsp salt
- 1/4 tsp pepper
- 2 1/2 c milk
- 1 onion, finely chopped
- 1 tbsp margarine or butter
Perfect Pulled Pork Recipe

- 1 5-pound boneless pork butt (shoulder)
- 1 1/2 teaspoons smoked paprika

- 2/3 cup cocoa powder
- 1 cup milk
- 1/2 cup Equal sugar substitute, measure
- 1/4 teaspoon cinnamon

- 4 cups kidney beans
- 1 1/3 cups water
- 1 1/2 tsp chili powder
- 1 1/4 tsp cumin
- 2-3 tbsp prepared mustard
- 1 pinch cayenne
- 2 tbsp soya sauce
- 1 tbsp brown sugar
- 3 cups sweet potatoes, mashed
- 8 10" flour tortillas
