Stuffed Mushrooms

Preheat oven to 425. Remove the stems from the mushrooms & finely chop the stems
- 24 White or Cremini Mushrooms With Caps ( each about 11/2-in. in diameter )
- 2 Tbsp. Extra-Virgin Olive Oil
- 1/2 C. Scallions, finely chopped
- 1/2 C. Red Bell Pepper, finely chopped
- 1/2 C. Coarse Bread Crumbs
- 1/2 C. Grated Parmigiano-Reggiano Cheese
- 1/4 C. Fresh Italian Flat-Leaf Parsley, finely chopped
- Salt & Freshly Ground Black Pepper
- 4 Tbsp. Unsalted Butter
- 1/2 C. Chicken Stock
- 1/4 C. Dry White Wine
Butterscotch Sauce

In a 11/2 qt. casserole, stir together cornstarch & brown sugar
- 1 Tbsp. Cornstarch
- 11/2 C. Brown Sugar
- 1/2 C. Cream ( Milk)
- 2 Tbsp. Cornsyrup
- 1/8 tsp. Salt
- 1/4 C. Margarine
- 1 tsp. Vanilla
Limoncello Mousse

This is a tart lemon curd spiked with limoncello & lightened by whipped cream
- 4 Egg Yolks, plus 1 whole egg, beaten
- 1 C. Sugar
- 1/2 C. Fresh Lemon Juice (about 3 lemons)
- Pinch of Salt
- 1/2 C. Unsalted Butter, room temperature
- 1/4 C. Limoncello
- 1 C. (35%) Whipping Cream
Mediterranean Pasta With Fire-Roasted Tomatoes

Preheat oven to 400. Place tomatoes, cut sides up, on a foil-lined baking sheet
- 2 lbs. (10-12) Plum Tomatoes, halved lengthwise
- 1/2 C. Olive Oil, divided
- 1 Tbsp. Italian Seasoning
- 2 Cloves Garlic, minced
- 1/2 tsp. Crushed Red Pepper
- 1/4 tsp. Coarse Ground Black Pepper
- 1/2 tsp. Sea Salt
- 8 oz. Pasta, such as spaghetti or fettuccine
Chocolate Crinkle Cookies

Always a Xmas favourite but great anytime!
- 1 C. Granulated Sugar
- 1/3 C. Vegetable Oil
- 1/3 C. Cocoa Powder
- 1 tsp. Baking Powder
- 1/4 C. Icing Sugar
- 2 Eggs
- 1 tsp. Vanilla Extract
- 1 1/2 All Purpose Flour
- 1/4 tsp. Salt
Lemon-Glazed Brussels Sprouts

Cook brussels sprouts in boiling water 8-10 min
- 8 C. Fresh Brussels Sprouts, trimmed & halved
- 1/4 C. Miracle Whip Light Dressing
- 1/4 C. Plain Non-Fat Yogurt
- 1 tsp. Each Lemon Zest & Juice
- 1/2 tsp. Yellow Mustard
Watermelon Lemonade

- 2 C. Seeded, peeled & cubed watermelon
- 1/2 C. White Grape Juice
- 1/3 C. Lemon or Lime Juice
- 1 Tbsp. Honey or Corn Syrup

Beef & Gorgonzola Pizza

- 1/2 Med. Red Onion, cut into thin slivers
- 2 Tbsp. Olive Oil
- 1 12-in. Italian Bread Shell ( such as Boboli )
- 8 oz. Cooked Roast Beef, thinly sliced
- 1 Sm. Sweet Red Pepper, seeded & chopped
- 4 oz. ( 1 C. ) Crumbled Gorgonzola Cheese
- 1/4 tsp. Pizza Seasoning
Fettuccine Alfredo

Bring a lg. pot of salted water to a boil for the fettucine
- 3/4 lb. Dry Fettuccine
- 2 Tbsp. Unsalted Butter
- 1 C. Heavy Cream
- 1/3 C. Chicken Broth
- 1 Egg Yolk
- 1/3 C. Parmesan, grated
- Salt & Coarsely Ground Black Pepper To Taste
