Vienna Cream Icing

1. Beat butter until as white as possible
- 4 oz. butter, room temperature
- 1-1/2 cups icing sugar
- 2 tbsp. milk, room temperature
Simple Chicken Bake

1. Put rice in 3 quart casserole
- 1 cup long grain rice
- 3 lbs. chicken parts, skin removed
- 1 can mushroom soup
- 1-2/3 cups water
- 1-1/2 oz. pkg. dry onion soup mix
- 1 tsp. paprika
Chocolate Cookies

Add liquids to dry ingredients
- Bring to a full boil and set aside:
- 2 cups sugar
- 1/2 cup shortening
- 1/2 cup milk
- Mix in a separate bowl:
- 3 cups rolled oats
- 1 cup coconut
- 3 tbsp. cocoa
- Blend in with liquid:
- 1/2 tsp. vanilla

- 4 cups flour
- 1 tbsp. sugar

Gluten Free Flour Mixture #1

An all-purpose gluten free flour mixture
- 6 parts rice flour
- 2 parts potato starch
- 1 part tapioca starch
Corn Bread

1. Measure first 5 igredients into a bowl; stir
- 1 cup corn meal
- 1 cup all-purpose flour
- 3 tbsp. granulated sugar
- 1 tbsp. baking powder
- 3/4 tsp. salt
- 1 large egg
- 1 cup milk
- 4 tbsp. margarine, melted
Chicken Crunch

1. Mix first 5 ingredients in small bowl
- 2/3 cup fine dry bread crumbs
- 1/4 tsp. poultry seasoning
- 1/4 tsp. parsley flakes
- 1/4 tsp. salt
- 1/16 tsp. pepper
- 1 cup yogurt
- 2 lbs chicken parts
- 2 tbsp. margarine, melted
Sliced Baked Potatoes

1. Srub and rinse potatoes
- 4 medium potatoes
- 2 - 3 tbsp. melted butter
- 2 to 3 tsp. dried herbs of choice (parsley, chives,thyme, sage, etc.)
- 4 tbsp. grated cheddar cheese
- 1-1/2 tbsp. parmesan cheese
Chicken Cola

1. Spray hot frying pan with cooking spray
- 1-1/2 lbs. boneless skinless chicken breasts
- 1/2 cup thinly sliced onion
- 1/2 cup ketchup
- 1 cup cola beverage
- 2 medium carrots, cut in matchsticks
Gluten Free Pizza Crust

This is the best gluten free pizza crust I have tried to date!
- 2 cups rice flour (white or brown; or a combination)
- 2 cups tapioca starch
- 2/3 cups milk powder (skim or buttermilk)
- 1 tbsp guar gum
- 1 tsp salt
- 1 cup warm water
- 2 tbsp yeast
- 1 tbsp sugar
- 3 tbsp butter
- 1/2 cup hot water
- 2 eggs
