- 4 large red peppers
- 1 tbsp ( 15 mL) olive oil
- 2 minced garlic cloves
- 2 onions, chopped

No Bake Chocolate Peanut Butter Corn Flake Bars

1 Heat peanut butter, sugar and corn syrup over low heat to melt
- 3 cups corn flakes, crushed
- 1 cup crunchy peanut butter
- 1/2 cup sugar
- 1/2 cup white corn syrup

Green Chili Chicken

Cooking in parchment paper ensures that the chicken will be tender and juicy
- 6 boneless, skinless chicken breasts
- 1 (4 oz) can chopped green chilies, drained
- 1 cup frozen corn
- 2 tomatoes, chopped
- 2 tbsp lime juice
- 1/4 cup chopped cilantro
- 1/2 tsp salt
- 1/8 tsp cayenne pepper
- 1 tsp cumin
Pumpkin Spice Cake Balls

Beat everything together (ending with the eggs) according to the package instructions and bake in a 13 X 9" pan
- 1 box French Vanilla cake mix (or yellow or plain vanilla)

Blueberry, Caramel and White Chocolate Oatmeal Cookies

1. Preheat oven to 350 degrees F
- 2 sticks softened butter
- 3/4 Cup granulated sugar
- 1 Cup packed brown sugar
- 2 eggs
- 1 1/2 Tablespoons pure vanilla
- 2 1/2 Cups all purpose flour
- 2 1/2 Cups oatmeal, I used quick oats
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 Cups Caramel Bits, by Kraft
- 1 1/2 Cups dried blueberries, found mine at Costco
- 1 Cup white chocolate chips or chopped white chocolate

1. Make topping: Combine all ingredients in a bowl

- 3 * 3 tablespoons unsalted butter, at room temperature
- 3/4 * 3/4 cup sugar
- 2 * 2 large eggs plus 1 large egg white

Coconut Brownie Bars*

1. MAKE THE BROWNIES Preheat the oven to 350°
- Brownies 14 ounces bittersweet chocolate, chopped
- 1 cup granulated sugar
- 1 stick plus 1 tablespoon unsalted butter, cut into tablespoons
- 1/4 cup light corn syrup
- 1/4 cup water
- 3/4 cup all-purpose flour
- 1/4 teaspoon salt
- 2 large eggs
- 1 tablespoon pure vanilla extract
- Coconut Topping 7 large egg whites
- 1 1/3 cups granulated sugar
- 1 pound finely shredded unsweetened coconut (6 1/2 cups)
- 1/4 cup sour cream
- 1 vanilla bean, split, seeds scraped
- 1 teaspoon finely grated orange zest (optional)
- Glaze and Garnish 1 pound 2 ounces bittersweet chocolate, chopped
- 4 1/2 tablespoons unsalted butter, cut into tablespoons
- 4 1/2 tablespoons light corn syrup
- 2 1/4 cups heavy cream
- 40 unsalted roasted almonds
Stollen

Stollen has been a firm festive favourite of mine for a while
- 100 ml/3½fl oz warm milk
- 6 g (1 sachet) fast action yeast or 2 tsp dried yeast or 20g fresh yeast
- pinch salt
- 1 tsp caster sugar
- 225 g/8oz plain flour, plus extra for dusting
- 1 tsp ground mixed spice
- 200 g/7oz mixed dried fruit (including glacé cherries)
- 25 g/1oz flaked almonds
- 50 g/2oz unsalted butter, melted
- 1 free-range egg, beaten
- 250 g/9oz marzipan (to make your own see my recipe here)
