Eggplant Meatballs

It really is true: you can make "meat"balls out of eggplant, and dang they are good
- 1 large eggplant
- 1 egg
- 1/3 cup parmesan cheese or romano cheese
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup breadcrumbs
Summer Squash Stuffing Casserole

This casserole is a perfect side dish any time of year, but especially for the big Thanksgiving dinner
- STUFFING:
- 4 tablespoons butter
- 1 diced onion
- 2 cups bread crumbs
- 1 1/2 cups vegetable broth
- 1 teaspoon sage
- 1 teaspoon thyme
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- FILLING:
- 1 summer squash, thinly sliced into rounds
- 1 zucchini, thinly sliced into rounds
- 1 can cream of mushroom soup
- 1 spoonful mayonnaise
- 1/2 teaspoon curry powder
- Juice from 1/2 lemon

Jenn's Favorite Beef Stew Seasoning

- 1 TB lemon juice
- 1 tsp Worcestershire sauce
- 1 clove garlic
- 1 onion
- 1-2 bay leaves
- 1 TB salt
- 1 tsp sugar
- 0.5 tsp pepper
- 0.5 tsp paprika
- dash allspice or cloves
Creamy tomato and kale soup

My version of tomato and kale soup, invented one snowy afternoon in late December
- 1 TB butter
- 1 TB olive oil
- A bunch of chopped up kale, stems removed
- 1 onion, chopped
- garlic, chopped
- 1 carrot, chopped
- 1 red bell pepper, chopped
- 1 quart of canned tomatoes (I used home-canned from tomatoes I grew in my garden)
- 1 tsp Kikkoman Aji-Mirin sweet cooking rice seasoning
- 1 tsp hot sauce
- 1/2 tsp thyme
- 1/2 tsp italian seasoning
- 1/2 tsp salt
- ground pepper
- 3 TB cream cheese (about 1/8 of a package)
Sour Cream Coffee Cake

- Cake
- 1/4 pound margarine (one stick)
- 1 cup sugar
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 eggs
- 1 teaspoon vanilla
- 1 cup sour cream
- Topping
- 1 teaspoon cinnamon
- 1/3 cup granulated sugar
- 1/2 cup chopped nuts
Dave Lieberman's Fettuccine Alfredo

- 1/2 lb cooked whole wheat pasta
