Creamy Succotash

Cook lima beans accoring to pkg directions
- 1 pkg (10oz) frozen lima beans
- 2 tblsp butter
- 4 strips bacon, cut into 1/4 inch slices
- 1 medium red onion, chopped
- 1 medium sized bag frozen corn kernals
- 1/2 cup chicken broth
- 3/4 tsp salt
- 1/2 tsp pepper
- 1/2 cup heavy cream
Peach-Riesling Sangria

A lovely white sangria with great balance
- 1 750 ml bottle dry Riesling
- 1 1/2 cups white cranberry peach drink
- 1/2 cup peach schnapps
- 3 tblsp lemon juice
- 2 tblsp sugar
- 1 lemon sliced thinly
- 1 orange sliced thinly
- 2 peaches cut in wedges(or frozen peach slices)
- Fresh raspberries (optional)
- Ice cubes
Macaroni and Cheese Salad

Cook pasta, drain and rinse
- 1 1/2 cups macaroni
- 2 tblsp cider vinegar
- 1 cup shredded cheddar
- 1/2 cup chopped green pepper
- 1/4 cup sliced celery
- 3 tblsp thinly sliced green onion
- 8 cherry tomatoes
- 1 cup mayo
- salt and pepper to taste
- 1/4 tsp Beau Monde seasoning
Roasted Butternut Squash with Brown Butter and Nutmeg

Preheat oven to 375. Spray large rimmed baking sheet with nonstick spray
- 1 butternut squash, about 2 lbs., halved, seeded, peeled and cut unto 1 inch chunks
- 2 tblsp olive oil
- 3 tblsp butter
- 1/4 tsp nutmeg
Irish Coffee Nog
By mirving
Combine all ingredients, stirring to dissolve sugar
- 1 quart commercial eggnog
- 1 1/4 cups brewed coffee
- 2/3 cup Irish Cream liqueur
- 1/2 cup brandy
- 1/2 cup sugar
Butternut Squash Casserole

Preheat oven to 325. Grease 2 qt casserole
- 3 cups mashed, cooked butternut squash
- 1/4 cup white sugar
- 1/4 cup packed brown sugar
- 1/4 cup butter,melted
- 8 oz can crushed pineapple, drained
- 1 tsp cinnamon
- 1 tsp vanilla
- 1/8 tsp nutmeg
- 1/3 cup chopped walnuts
Golden Gin Punch

Combine first three ingredients; chill
- 1 cup gin
- 1 cup banana flavored liqueur
- 6 oz. can thawed lemonade
- 1 32 oz bottle chilled club soda
- 1 32 oz bottle chilled ginger ale
- Orange slices (optional)
- Maraschino cherries (optional)
Carrots with Curry and Cilantro

Melt butter. Add ginger, garlic and curry; saute 30 seconds
- 3 tblsp butter
- 1 tsp minced peeled fresh ginger
- 1 garlic clove, minced
- 3/4 tsp curry powder
- 1/4 cup chicken broth
- 2 tblsp apricot preserves
- 1 lb carrots,peeled, cut diagonally into 1/4 inch thick slices
- 3 tblsp fresh cilantro, chopped
Hot Buttered Rum

Mix all ingredients together except the rum
- 1 lb powdered sugar
- 1 lb brown sugar
- 1 lb butter, softened
- 1 qt vanilla ice cream
- 1 tblsp cinnamon
- rum
Butternut Squash Casserole

Combine first 7 ingredients; pour into greased casserole dish
- CRUNCHY CEREAL TOPPING:
- 2 cups cooked and mashed butternut squash
- 3 large eggs
- 3/4 cup sugar
- 1/3 cup butter,softened
- 1/3 cup milk
- 1 tsp ginger
- 1/2 tsp coconut flavoring
- 1 1/2 cups cornflake cereal crumbs
- 3/4 cup firmly packed brown sugar
- 1/2 cup chopped pecans
- 1/4 cup butter, melted
