Overnight Breakfast Caasserole

When ready to bake, preheat oven to 350 degrees
- 1 pound ground breakfast sausage
- 4 cups sharp cheddar cheese, grated
- 12 eggs
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 1 cup heavy whipping cream
- 1/4 cup green onion, chopped
- 8 oz. sliced mushrooms
- Kosher salt and freshly ground pepper, to taste
Vegetarian White Bean Chili

Heat oil in a Dutch oven over medium heat
- 2 tablespoons olive oil
- 1 large white onion, diced (about 2 cups)
- 1 large carrot, cut in 1/2" pieces (about 1 cup)
- 3 ribs celery, cut into 1/2' pieces (about 1 cup)
- 2 15.5 oz. cans cannellini beans, drained and rinsed
- 1 tablespoon ground cumin
- 1 teaspoon kosher salt
- 4 cups low-sodium vegetable broth
- 1 cup chopped kale (about 2 oz.)
- 1/2 cup uncooked white quinoa, rinsed
- 1 tablespoon chopped fresh oregano
Broccoli Casserole

Saute pepper, onion and celery in butter over low heat
- 1/4 cup green pepper, chopped
- 1/4 cup onion, chopped
- 1/2 cup celery
- 3 tablespoons butter
- 2 cups cooked rice which equates to 1 cup uncooked rice
- 2 pkg. (10 oz. each) frozen chopped broccoli (thawed)
- 1 can cream of chicken soup
- 1/2 cup milk
- One 8 oz. jar cheese whiz

- 1 1/2 qts. EACH of white Rum and Dark/Jamaican Rum
- 1 1/2 qts. of pineapple juice
- 18 oz. Grenadine
- 1 jar cherries (pitted)
- 1 - 2 oranges, cut and squeezed
Baked Ziti - Orlando Sentinel

Heat oven to 350 degrees. Coat 9x13 pan with cooking spray
- 16 ounces ziti pasta, cooked
- 1/2 pound EACH - lean ground beef and turkey, cooked
- 4 cups chunky pasta sauce
- 1 tablespoon Italian seasoning, divided
- 8 ounces shredded low-fat mozzarella, divided
- 15 ounces low-fat cottage cheese
- 2 egg whites
- 1/4 cup freshly grated Parmesan cheese
Breakfast Sausage Casserole

Crumble sausage into a medium skillet
- 1 lb. ground pork sausage
- 1 teaspoon mustard powder
- 1/2 teaspoon salt
- 4 eggs, beaten
- 2 cups milk
- 6 slices white bread, toasted and cut into cubes
- 8 oz. mild shredded Cheddar Cheese
Pineapple Upside Down Cake Martini

Mix pineapple juice and vodka
- 2 parts pineapple juice
- 1 part Pinnacle Whipped Cream Vodka
- Splash of Grenadine
- Unpeeled fresh pineapple slice for garnish
Pumpernickel Bread Dip

Cut hole in top of bread and take center out
- teaspoon of the following:
- 1 Round Pumpernickel bread
- 2 cups sour cream
- 1 cup mayonnaise
- Dill Weed
- Garlic Powder
- Lowry Seasoning
- Onion Flakes
- Salt and Pepper to taste
Classic Fried Rice

Heat oil in a large skillet over medium heat
- 1 tablespoon vegetable oil
- 2 cups Minute White Rice, uncooked
- 2 eggs, slightly beaten
- 1 cup chicken broth
- 1 cup frozen stiry fry vegetables, thawed
- 3 tablespoons Soy Sauce
Chicken Rollatini Stuffed w/Zucchini & Mozzarella

Wash and dry cutlets, season with salt and pepper
- 1 teaspoon olive oil
- 4 cloves garlic, chopped
- 1 1/2 cups (1 medium) zucchini, shredded
- 1/4 cup & 2 tablespoon Romano Cheese (or Parmesan)
- 3 oz. Part Skim Shredded Mozzarella
- Salt and Pepper to taste
- 8 thin cutlets, 3 oz. each
- 1/2 cup Italian Seasoned Breadcrumbs
- 1 lemon, juice of
- 1 tablespoon olive oil
- Salt and fresh Pepper
- Olive oil non-stick spray
