Fresh Tomato Sauce and Meatballs

Heat the oil in a Dutch oven or stock pot
- Meatballs:
- 2 Large onions, chopped
- 2-4 cloves fresh garlic,minced
- 1/3 cup Olive oil
- 5 cups fresh tomatoes, peeled and chopped (6-8 large tomatoes)
- 1 tsp. salt
- 1 tsp. sugar
- 1 Tblsp. Hungarian Sweet Paprika
- 1 tsp. California Basil
- 1-2 Tblsp. Turkish Oregano
- 1 Bay leaf
- 1/4-1/2 Penzeys freshly ground pepper
- 1/2 - 1 tsp. California Crushed Red peppers
- 2 6oz. cans tomato paste
- 1/4 cup fresh bread crumbs
- 4 cloves garlic, finely minced (1 tsp. minced garlic)
- 1 egg
- 1/4-1/2 tsp. ground nutmeg
- 1 tsp. Penzeys freshly ground pepper
- 1 lb. lean ground beef
- 1 Tblsp. flour for dusting
Chocolate Cake

Bring to boil: shortening, margarine, water, and cocoa
- Chocolate Frosting:
- 1/2 cup shortening
- 1/2 cup margarine
- 1 cup water
- 3 Tblsp. Cocoa
- 2 cups sugar
- 1/2 cup buttermilk
- 2 eggs
- 2 cups flour
- 1 tsp. soda
- 1 tsp. vanilla
- 4 Tblsp. Cocoa
- 1 cube butter
- 6 Tblsp. milk
- 1 tsp. vanilla
- add powdered sugar
Teriyaki Meatloaf

Mix all ingredients together
- 3 lb. hamburger
- 3 Tblsp. mayonaise
- 1/3 cup sugar
- 1 cup bread crumbs
- 3 eggs
- 3/4 soy sauce
- 3/4 milk
- garlic & ginger
Garden Vegetable Dip

- *FILLING:*
- 1 C. Sugar
- 2 T. All-purpose flour
- 1/4 t. Salt
- 1/2 C. Heavy whipping cream
- 3 Ea. Egg yolks
- 21/2 C. Rhubarb, chopped, fresh or frozen
- *MERINGUE:*
- 3 Ea. Egg whites
- 1 t. Vanilla extract
- 6 T. Sugar
- 1/4 C. Flaked coconut, toasted
Strawberry Almond Cream Tart

Six 4-inch round removable-bottom tart pan or one 9-inch pan Preheat oven to 350°
- Crust:
- Instead of making individual tartlettes, you can make one big tart, just use a 9-inch removable bottom tart pan
- 36 honey graham crackers (about 9 sheets)
- 2 tablespoons sugar
- 2 tablespoons butter, melted
- 4 teaspoons water
- Cooking spray
- Filling:
- 8 ounces cream cheese
- 1/4 cup sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon finely grated lemon zest (use a rasp grater)
- Topping:
- 6 cups small fresh strawberries, divided
- 1/3 cup sugar
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon juice
- 3 tablespoons sliced almonds, toasted
Yogurt popsicles

Thaw the can of orange juice; then beat all ingredients together, then freeze in popsicle molds
- 1 16oz. plain yogurt
- 1 small can orange juice
- 2 tsp. vanilla
Holiday Yams

Drain Yams. Add enough canned milk to soften yams and mix thoroughly
- Topping:
- 2 - 2 lbs. 8 oz. cans Bruce's Yams
- 2 eggs, beaten
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
- 1/4 cup soften butter
- 1 tsp. vanilla
- 1/2 cup packed brown sugar
- 1/2 cup soften butter
- 1 1/2 cup packed brown sugar
- 6 Tblsp. flour
- 1 cup chopped pecans
Lemon Bars

Preheat the oven to 350 degrees F
- For the crust:
- 1/2 pound unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 2 cups flour
- 1/8 teaspoon kosher salt
- For the filling:
- 6 extra-large eggs at room temperature
- 3 cups granulated sugar
- 2 tablespoons grated lemon zest (4 to 6 lemons)
- 1 cup freshly squeezed lemon juice
- 1 cup flour
- Confectioners' sugar, for dusting
Pumpkin Pie Cake

Mix together cake mix, egg, and melted butter and press into 9 x 13 glass pan
- Crust:
- 1 Yellow cake mix (reserve 1 cup)
- 1 egg, beaten
- 1/2 cup butter, melted
- Filling:
- 1 lb. can pumpkin
- 1 cup sugar
- 1/2 cup milk
- 2 eggs, beaten
- 2 1/2 tsp. pumpkin spice
- Topping:
- 1 cup cake mix (the reserved cup from above)
- 1/2 cup sugar
- 1/4 cup margarine, softened
