Spicy Honey Chicken

Combine the rub spices in bowl and mix well
- Rub:
- 8 boneless skinless chicken thighs, about 2lbs (Yes, Thighs!!)
- everyone is always asking me if they can use breasts for this. Sure you can, but I'm tellin'
- ya right now it's better with thighs.
- 2 t vegetable oil
- 2 t granulated garlic
- 2 t chili powder
- 1/2 t onion powder
- 1/2 t coriander
- 1 t kosher salt
- 1 t cumin
- 1/2 t chipotle chili powder
- Glaze:
- 1/2 C Honey
- 1 Tbl Cider Vinegar
Bread (bread machine)

Place the water, sugar and yeast in the pan of the bread machine
- 1 cup warm water (110 degrees F/45 degrees C)
- 2 tablespoons white sugar
- 1 (.25 ounce) package bread machine yeast
- 1/4 cup vegetable oil
- 3 cups bread flour
- 1 teaspoon salt
Burritos- Beef & Bean (freezer)

1.Brown ground beef. Before draining fat, stir in dry taco seasoning
- 1 lb. ground beef
- 15.5 ounces pinto beans
- 1.5 ounces green chilis, chopped
- 15.5 ounces enchilada sauce, red
- 1 packages taco seasoning mix
- 8 ounces Monterrey Jack
- 8 ounces cheddar cheese, shredded
- 8 each flour tortillas, med-large
Enchiladas

Cook meat & onion until tender
- 1 lb. ground beef or shredded chicken
- 1/2 C diced onion
- 8 6" flour tortillas
- 8 oz taco sauce or salsa
- 1 C shredded cheese
- 4 Tbl butter
- 4 Tbl flour
- 2 tsp chicken boullion
- 1 1/3 C water
- 4 Tbl diced green chiles
- 2/3 C sour cream
Puffed French Toast

In a large skillet or frying pan, heat about 1/4" of vegetable oil over medium heat
- 2 eggs
- 2 1/2 Tbsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. vanilla extract
- 2 c. milk
- 1 c. flour
- 2 1/2 tsp. baking powder
- 12 slices Texas style toast, cut in half diagonally
Dressing- Ranch Dressing

Mix & chill
- 1 C mayo
- 2/3 C buttermilk
- 1/4 tsp. vinegar
- 1 tsp. parsley
- 1/8 tsp. dill
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1 1/2 tsp. dried chives
- 1/8 tsp. pepper
- 1/4 tsp. seasoned salt
- 1/8 tsp. dry mustard
Seafood- Catfish Cakes

1.Place catfish in a saucepan with enough water to cover
- 1 pound catfish fillets
- 1 medium onion, chopped
- 1 teaspoon prepared yellow mustard
- 1 tablespoon creamy salad dressing (e.g. Miracle Whip)
- 1/2 teaspoon Old Bay Seasoning TM, or to taste
- 2 1/2 cups coarsely crushed buttery round crackers
- 1 egg
- 1 cup vegetable oil (for frying)
Pizza Dough

Measure the warm water into a 2-cup liquid measuring cup
- Ingredients:
- Yield: enough dough for 2 medium pizzas or 4 calzones
- 1/2 cup warm water
- 2 1/4 tsp. instant yeast
- 4 cups (22 oz.) bread flour, plus more for dusting
- 1 1/2 tsp. salt
- 1 1/4 cup water, at room temperature
- 2 tbsp. extra-virgin olive oil
Taco Chicken

Juice the limes and combine with a couple splashes of red wine vinegar
- 1 lb. chicken breasts or thighs
- A couple of juicy limes
- A splash of red wine vinegar
- 1-3 cloves garlic, coarsely chopped
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. Kosher salt
- 1/2 tsp. black pepper
Rice- Jambalaya (from Layne's Mimi)

Cook sausage until browned in a large Dutch oven
- 1 pound smoked sausage, sliced
- 1 to 1 1/2 pounds ground beef
- 1 cup chopped green pepper
- 1 cup chopped onion
- 1 clove (I use more) of garlic, diced
- 1 tablespoon all-purpose flour
- 1 (28 oz.) can diced tomatoes,undrained
- 2 1/2 cups water
- 2 tablespoons chopped fresh parsley
- 2 cups uncooked regular rice (Uncle

- 2 tablespoons Worcestershire sauce
- 2 teaspoons salt
- 1/2 teaspoon dried thyme
