Cajun Gumbo

Start heating the chicken stock in a large pot over medium heat
- 1 to 2 lbs Chicken (I use breasts) cut into small pieces
- 1 lb Andouille Sausage (can substitute with a package of "Hillshire Hot Links")
- 1/2 to 1 lb peeled Shrimp (optional)
- 1/2 Cup Flour (I always add a bit more when making the roux, but start with 1/2 cup.)
- 1/2 Cup Butter
- Vegetable Oil (for frying)
- 6 Cups Chicken Stock
- 1 large Onion, minced
- 2-4 Green Onions, chopped
- 3 Cups Cooked Brown Rice
- 1 tsp Basil
- 1 Tbsp fresh Parsley
- 2 tsp Salt
- 2 + tsp Black Pepper
- 1/2 tsp (Cayenne) Red Pepper
- 1/8 tsp Allspice
- 1/8 tsp Powdered Cloves
- 2-3 Bay Leaves
- 2 + tsp Tabasco Sauce
- 1 Tbsp Worcestershire Sauce
- Filé Powder
Salsa (Cozymel's)

Blend and store overnight in a metal bowl
- 1 can (28 Ounce) Whole Tomatoes With Juice
- 2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
- 1/4 cup Chopped Onion
- 1 clove Garlic, Minced
- 1 whole Jalapeno, quartered and sliced thin (remove seeds and scrape membranes)
- 1/4 teaspoon Sugar
- 1/4 teaspoon Salt
- 1/4 teaspoon Ground Cumin
- 1/2 cup Cilantro (more To Taste!)
- 1/2 whole Lime Juice
5 Minute, 5 Ingredient, 5 Star Brown Gravy

Combine water and bouillon in a heat proof container (I use my glass measuring cup)
- makes about 2 cups
- 1/4 cup unsalted butter
- 1/4 cup flour
- 1 teaspoon onion powder
- 2 cups water
- 4 teaspoons beef bouillon granules
BBQ Sauce

Peddie Family BBQ Sauce Recipe
- 1/2 cup Ketchup
- 3 tbs Brown Sugar
- 1 tbs prepared mustard of your choice
- 2 tbs Cider Vinegar
- 1/2 ts Red Pepper flakes
- 1 1/2 tbs Molasses
- Secret Ingredient: Juice from whatever meat you are using and chopped up gristle

- Toppings:
- 2 tablespoons sugar
- 1 teaspoon kosher salt
- 1 tablespoon pure olive oil
- 3/4 cup warm water
- 2 cups bread flour (for bread machines)
- 1 teaspoon instant yeast
- 2 teaspoons olive oil
- Olive oil, for the pizza crust
- Flour, for dusting the pizza peel
- 1 1/2 ounces pizza sauce
- 1/2 teaspoon each chopped fresh herbs such as thyme,
- oregano, red pepper flakes, for example
- A combination of 3 grated cheeses such as mozzarella,
- Monterey Jack, and provolone

- 2 3/4 cups sifted cake flour (not self-rising; sift before measuring)
- 1/4 cup unsweetened cocoa powder (not Dutch-process)
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 4 large eggs, at room temperature 30 minutes
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1 1/2 teaspoons pure vanilla extract
- 2 cups sour cream
- For frosting
- 1 cup sugar
- 6 tablespoons all-purpose flour
- 6 tablespoons unsweetened cocoa powder (not Dutch-process)
- 1 1/2 cups whole milk
