Pasta Fagioli in the Crockpot

- 1 onion, chopped
- 3 carrots, chopped
- 4 stalks celery, chopped
- 2 (28 ounce) cans diced tomatoes, undrained
- 1 (16 ounce) can red kidney beans, drained
- 1 (16 ounce) can white kidney beans, drained
- 3 (10 ounce) cans beef stock
- 3 teaspoons oregano
- 2 teaspoons pepper
- 5 teaspoons parsley
- 1 teaspoon Tabasco sauce (optional)
- 1 (20 ounce) jar spaghetti sauce
- 8 ounces pasta

Pour boiling water over the bran in a large bowl, stir to moisten evenly
- 3 cups 100 percent wheat bran
- 1 cup boiling water
- 2 eggs slightly beaten
- 1/2 cup molasses

- 1 tsp curry powder

- 1/2 cup milk
- 1/2 cup shortening
- 3 cup oatmeal
- 1 cup coconut

Butternut Squash and Pear Soup

Put ginger, cinnamon sticks, squash and sweet potato in soup pot
- 1 inch ginger root peeled & minced)
- 2 cinnamon sticks
- 1 butternut squash peeled, seeded & cubed)
- 1 sweet potato cubed
- 6 c vegetable stock
- 1 Tbsp olive oil
- 1 medium onion chopped
- 1/3 c white wine
- 3 pears cored and sliced
- 1 c coconut milk
- 1 tsp sea salt
- 1 tsp white pepper
- 1/2 red pepper diced for garnish
Quinoa Greek Salad

Cook quinoa for 15 mins or until liquid is absorbed Transfer to a large bowl and cool Stir in veggies and cheese
- 2 c chicken stock
- 1 c quinoa
- 1 c green and red pepper diced
- 1/2 c red and green onion chopped
- 1/2 c English cucumber
- 1/2 c kalamantra olives sliced
- 3 oz Feta crumbled

- 1/4 c lemon juice
- 2 Tbsp olive oil
- 1/2 tsp oregano and basil
