Brooklyn Blackout Cake

1. Prepare the cake layers

- 1 ½ cups Brooklyn Brewery Black Chocolate Stout (or other chocolate stout)
- 1 ½ cups (3 sticks) unsalted butter, cut into ½-inch pieces
- 1 ½ cups dark Dutch-process cocoa powder
- 3 cups all-purpose flour + more for dusting
- 2 ¾ cups sugar
- 3/4 tablespoon baking soda
- 1 cup sour cream (preferably full-fat)
- 1 ½ teaspoon kosher salt
- 3 large eggs, at room temperature
- Ingredients Dark Chocolate Pudding)
- ¼ cup to 1 ¾ cups whole milk
- 2 ½ tablespoons cornstarch
- ½ cups sugar
- 2 ounces (about 1/3 cup) dark chocolate, chopped- we prefer 60% cocoa content or higher.
- 3 tablespoons dark Dutch-process cocoa powder
- 1 teaspoon vanilla extract
- ¾ teaspoon sea salt
- Ingredients (Dark Chocolate Buttercream)
- 16 tablespoons (1 cup, 8 ounces) cold unsalted butter
- 7 cups confectioners’ sugar + more for thickening
- ½ cup dark Dutch-process cocoa powder
- ¾ cup salted dark chocolate pudding (from step 2)
Stuffed Peppers (Dinner at the Zoo)

Preheat the oven to 350 degrees F
- 6 bell peppers any color, or a combination of colors
- 2 teaspoons olive oil
- 1 1/2 pounds ground beef I use 90% lean
- 1/2 cup onion finely chopped
- 2 teaspoons garlic minced
- 1 1/2 cups cooked white rice
- salt and pepper to taste
- 15 ounce can tomato sauce
- 1/2 teaspoon Italian seasoning
- 1 1/2 cups mozzarella cheese shredded, divided use
- 2 tablespoons parsley chopped

Weight Watchers Caesar Dressing

Mash anchovy paste and garlic together in large bowl
- 3/4 tsp Anchovy paste
- 1 garlic clove, minced
- 1 Tbsp lemon juice
- 1 tsp dijon mustard
- 2 Tbsp light mayo
- 2 Tbsp parmesan cheese
- dash worcestershire sauce
Pina Colada Cake

Cake: Heat oven to 350 degrees
- Cake:
- 1 box white cake mix
- 1/3 cup light rum
- 1/2 cup water
- 1/4 cup vegetable oil
- 4 eggs
- 1 pkg instant coconut pudding
- 1 cup coconut
- Icing:
- 1 pkg instant coconut cream pudding
- 1/3 cup light rum
- 8 oz crushed pineapple with juice
- 8 oz cool whip

1.In a skillet over medium-high heat, cook the almonds, stirring frequently, until lightly toasted

- 1 teaspoon honey

- 1 1/2 cups boiling water

- 1/2 c natural chunky peanut butter

- 1/4 tsp coarse salt
