Dirty Rice

Clean top and bottom of gizzards by peeling off skin and grind gizzards in food processor
- 3 pounds chicken gizzards cleaned and ground
- 2 pounds ground pork
- 2 small onions finely chopped
- 1 head celery finely chopped
- 4 cups rice washed, not cooked
Divinity Fudge

Cook sugar, syrup, and water over medium heat to 252 F or hard boil test
- 3 cups sugar
- 1/2 cup light corn syrup
- 2/3 cup water
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 egg whites
- 1 cup pecans chopped
Eclairs

In a medium saucepan combine margarine or butter, 1 cup water, and 1/8 teaspoon salt
- 1/2 cup margarine or butter
- 1 cup all-purpose flour
- 4 eggs
- Instant chocolate pudding
- chocolate frosting
Egg Rice

Warm up rice in skillet with butter
- 1 serving rice cooked
- 2 eggs beaten slightly
- salt and pepper to taste
Eggplant Beignet

Boil eggplants, peel, cut in half, remove seed, cut into small pieces and drain well
- 3 eggplants boiled
- 3 scoops flour (serving spoon size)
- 3 scoops sugar (serving spoon size)
- vanilla
- 2 eggs
- peanut oil

- 1 medium onion
- 1 medium eggplant OR
- 6 boneless, skinless chicken breasts
- 1 large jar spaghetti sauce
- 16 ounces mozzarella cheese
- bread crumbs
- eggs beaten
- 1 package spaghetti cooked
Eggplant Parmesan

Cut eggplants into thin slices
- 2 eggplants
- 1 egg beaten
- 1 cup bread crumbs
- 1 jar Sal and Judy tomato sauce
- 1 pound mozzarella cheese shredded
- Romano cheese
- salt and pepper
Eggplant, Crabmeat Casserole

Peel, cut, and dice eggplant and soak in seasoned water
- 1 large eggplant
- 1 large onion chopped
- 1 pound fresh cleaned shrimp
- 1/4 stick margarine
- 1 cup bread crumbs
- 1 cup crab meat cooked
- Creole seasoning to taste
Fat Ladies

Grease 9x12 inch pan. Slice up cookie dough and lay in bottom of pan
- 1 cup pecans chopped
- 1 roll Pillsbury Chocolate Chip Cookie Dough
- 1 bag caramel candy
- 1/3 cup cream
- 1 (16 oz) milk chocolate chips
Faux Amaretto Punch

Boil water and add sugar until dissolved
- 1 large can of pineapple juice
- 1 small can of frozen pink lemonade
- 1 bottle pure almond extract
- 2 cups water
- 1 cup sugar
- 2 bottles ginger ale
- pineapple chunks and cherries optional
