Mix together eggs, oil, butter, sugars and vanilla - set aside
- 2 eggs
- 1 cup veg. Oil
- 1 cup butter
- 1 cup sugar
- 1 cup powdered sugar
- 2 tsp vanilla
- 4 cups + 2 Tbsp flour
- 1 tsp salt
- 1 tsp baking soda
- 1 tsp cream of tarter
Lighter Spaghetti and Meatballs

- 1 slice whole wheat sandwich bread, ground into coarse crumbs
- 8 oz ground sirloin
- 1 medium onion, chopped
- 1 portobello mushroom, stem removed and chopped
- 4 garlic cloves, chopped
- 1/4 c fresh parsley leaves
- 1 egg white
- Kosher salt and freshly ground black pepper
- Freshly grated nutmeg
- 2 Tbsp olive oil
- 1 28-oz can whole peeled tomatoes in juice, crushed by hand
- 1/2 c low sodium beef broth
- 1 small bunch fresh basil
- 3 sprigs fresh thyme
- 8 oz whole wheat spaghetti
- Parmesan for serving
Winter Vegetable Minestrone Soup

Heat 1-3 Tbsp of your favorite olive oil over medium heat in a large pot
- 1-2 Tbsp. Olive oil
- 1 c. Diced onion
- 1 c. Diced celery
- 1 c. Diced red bell pepper
- 2 c. Diced carrots
- 2-4 large cloves of garlic, smashed and minced
- 2 c. Cubed butternut squash
- 5-6 c. Vegetable broth
- 1 c. Canned tomato sauce
- 1 15 oz. can cannellini beans, rinsed and drained
- 1 bay leaf
- 1 tsp. Parsley
- 1/2 tsp. Sea salt
- 1/4 tsp. Garlic powder
- 1/4 tsp. Dried basil
- 1/8 tsp. Dried oregano
- 1 c. Ditalini pasta, or equivalent
- 1 French or Italian style baguette
- Softened sweet cream butter
Pecan Pie

In saucepan boil sugar and corn syrup together for 2 to 3 minutes;set aside to cool slightly
- 1 c. Sugar
- 1 1/2 c. Corn Syrup (both dark & light)
- 4 Eggs
- 1/4 c. Butter
- 1 1/2 tsp. Vanilla
- 1 1/2 c. Pecans, coarsely broken
- 1 unbaked deep dish pie shell
Chicken Noodle Soup

- 1 Tbsp olive oil
- 2 cloves garlic, finely chopped
- 8 medium green onions, sliced
- 2 medium carrots, chopped
- 2 c. cubed cooked chicken
- 2 c. Uncooked egg noodles (4 oz)
- 1 Tbsp chopped fresh parsley or 1 tsp parsley flakes
- 1/4 tsp pepper
- 1 bay leaf
- 5 1/4 c. chicken broth
Tate's Chocolate Chip Cookies

Preheat oven to 350* Grease or line 2-3 cookie sheets with parchment paper
- 2 c. All-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 c. Salted butter
- 3/4 c. Sugar
- 3/4 c. Dark brown sugar, firmly packed
- 1 tsp water
- 1 tsp vanilla
- 2 large eggs
- 2 c. Semi-sweet chocolate chips
Chinese Chicken Salad

Combine all ingredients into large bowl- toss dressing into cabbage mixture and chill for at least 1 hour
- Dressing:
- 2 large chicken breasts-cooked and chopped
- 2 Tbl. Sesame seeds
- 1/2 head cabbage-chopped
- 3-4 green onions
- 1 pkg. Chicken top ramen noodles
- 1 carrot shredded
- 1/2 c sliced almonds
- 2 Tbl. Sugar
- 1/2 c. Oil
- 3 Tbl. Rice wine vinegar
- 1 tsp. Salt
- 1/2 tsp. Pepper
- Seasoning packet from ramen noodles
Mushroom-Spinach Stuffed Shells

- For the stuffed shells:
- Kosher salt
- 8 oz (20-24) jumbo pasta shells
- 2 Tbsp extra-virgin olive oil, plus more for drizzling and brushing
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 12 oz white mushrooms, thinly sliced
- 1 10oz pkg frozen spinach, thawed and squeezed dry
- 1 1/2 c. Low fat small curd cottage cheese
- 1 c. Shredded part skim milk mozzarella cheese
- 1/3 c. Grated Parmesan cheese
- 1 large egg, lightly beaten
- 1/4 c. Chopped fresh basil
- For the sauces:
- 2 Tbsp extra virgin olive oil
- 3 cloves garlic, thinly sliced
- 1 tsp fennel seeds
- Large pinch of red pepper flakes
- 1 28-oz can whole plum tomatoes, crushed by hand

- 1/4 c. Low fat small curd cottage cheese

- 1 med onion, chopped
- 1 4 oz. can chopped green chile peppers
- 2 cloves garlic, minced
- 2 c. Water
- 1 14.4 oz. can chicken broth
- 1 tsp. Cumin
- 1 tsp. Chili powder
- 1 tsp. Salt
- 1/4 tsp. Pepper
- 1 bay leaf
- 1 10 oz. package frozen corn
- 1 Tbsp. Chopped cilantro
- 7 corn tortillas
- Vegetable oil
